I never add oil to the pan when I'm frying bacon. It makes its own "oil" which I save for use in other recipes (can't make good cornbread without bacon fat, IMO!) I doubt if I will go to the trouble of assembling these egg cups, but I will eat all the ingredients otherwise!
Hi Donal, baking them in ramekins instead of a muffin pan would ensure no messy overflow. Plus, you would be able to stuff more yummy goodness in like mushrooms, avocado etc etc. And who doesn't want that ; )

Also....if someone didn't like their egg yolk runny, but fully cooked, how do you suggest changing the recipe? Would you just extend the cooking time or would that overcook the other ingredients?
You're right. If you extend the cooking time, you might overcook the other ingredients. If you want fully cooked eggs, you could try to scramble the eggs and then pour them into the tins. You might have to adjust the cooking time accordingly.
You know what would make these epic? A drizzle of zesty lime hollandaise on the side? Or am I being too indulgent... 😬 Going to give these a go on the weekend - might try a Turkish inspired combo with roasted capsicum & paprika!!
Will these freeze well? It would be amazing to have some of these in the freezer to just heat up in the morning, or maybe leave in the frigde to overnight :) Or will they just fall appart as they thaw?
