the yellow parts in the burger are the garlic confit. its just really soft garlic. their burger is basically whats called a loss leader (you sell something at a loss in order to get people in the door), except they are still making a little bit off of it.
I live in East Peoria Illinois, it is about a 2.5 hour drive from Chicago, across the river from Peoria. And the food here is very god, and pretty cheap. A bar near me has $2.00 tacos every Thursday, and a little mom and pop place about 4 miles from me called Wonderdog has an $8.00 meal special every day, which is much better than McDonalds value meals, and cheaper. You get a burger, fries or tots, and a soda for $8.00. And different days have different sandwiches, Tuesday is the 1/4 lb. tenderloin that is really good, and I get it all the time. One other day it's BBQ pulled pork, etc. they also have really good chili dogs for $3.29 each, and really good home made hot tamales, for $2.00. And the Taco Bell here is pretty cheap too, I eat there once in a while, I get 2 tacos and a nachos with cheese and it is about $7.00 with tax.

Before I was born and for a while after, my parents owned a fishing lodge in northern Ontario. A local kid worked for them and eventually became like an adopted son to my parents and he became my unofficial godfather. Eventually, he came to the states with the family and was so anxious to try what my family were all talking about, "a good, hot sub." So they go to where ever they went - I think it was a bar - and they order up and finally the sandwiches come and everyone takes a bite with a big, satisfied "aaahhh!" Everyone except for our Canadian friend, who, after one bite, groans, "This damn thing's cold!" He took"hot" to be a literal description. They were talking about the homemade Italian hot peppers that are a staple add-on. lol. "hot sub," indeed.
A cheeseburger from McDonald's in NYC is $2.39 and the meal is $13.39, well, that's what it says on the internet. I would rather get five of those burgers and water than a McDonald's cheeseburger meal. The size of the ground beef before they squished it, look smaller than the size of a tennis ball. That seems like a good bit of ground beef.

I think she said she uses 80/20 beef (20% fat). We also have 90/10 and 85/15, I believe. Not sure about the UK.
