- Ingredients for Kwenkwen:
4 cups kwenkwen rice
30 grams momone
2 cups tomato purée
170lb tomato paste
3 tablespoons tomato paste
45 grams Dawadawa
8-10 large Shallots
3 cloves garlic
35 grams ginger
380 grams shallots
2 scotch bonnets
60 grams herrings
4 pieces hwentia
1 teaspoon black pepper
1 teaspoon aniseed
2 scotch bonnet peppers
¾ pcup shea butter
3 tablespoons coarse shrimp powder
Salad ingredients:
1 bunch curly leaf lettuce
2 fresh tomatoes. Sliced
⅓ cup grated carrots
⅓ cup sliced red onion
¼ cup sliced sweet white onion
Fried fish ingredients:
4 lb sea bass
1teaspon salt
¼ teaspoon black pepper
½ teaspoon garlic powder
2 teaspoons onion powder
2 tablespoons all purpose flour

Love that you didnt add gari. Shows how authentic you are. Your attention to detail is outstanding. I must add groundnut oil is a graleat alternative to shea butter for the base stew. Thank you for sharing❤

I see! But the stew was a lot. We do use a good amount of dawadawa I n all recipes we use it in. Maybe we are oversabi 😄😄

If you live in the USA, you won't use 20. Certain Peppers here are hotter.
Habaneros are extremely hot! I remember the first time I travelled out of Ghana to the UK. I went to visit my friend from the UK. She was a student then and so while she was gone I decided to meal prep some stew for her. Well I added those peppers I found like I would in Ghana. Of course the stew was delicious but we had to drink water with every bite😂😂😂

Original kwenkwen is not served with gari. But you can add if you prefer...some sellers add it these days but typically it is served with beans, salad, talia, eggs, wele and fish....even meat is not authentic authentic with this dish.
Eating it with gari is like eating jollof with gari- the textures dont marry well but you can add gari if you want.
Yes sis, I really don't remember ever eating it with gari.
There is nothing a nutritionist will tell me. This is complete diet especially if you have 2 plates of this with ginger or hibiscus juice.
