How to Assemble a Double Barrel Cake | Bridie Bakes

  • This video is all about making sure that your tall, double barrel cakes have that extra bit of support that they need to hold the height and weight of so many layers! Adding in dowels and boards is going to take the weight off the bottom cake layers and provide some structure to keep it all nice and stable.
    It's a good idea to use a nice tall scraper, so that you can smooth out the icing in one shot, instead of having to scrape around at different heights.
    And I always suggest refrigerating at different points during assembly to keep your cake a bit more stable and easy to handle!!

    Fantastic video! At first I thought you were making two cakes. But then I saw you placing the next three and I was like “The madwoman! She’s done it!” I have one question: would this work with carrot cake? I’m not sure the moisture would hold too well with that much cake stacked. Thanks again for the video!

      Haha :P for carrot cake, it's really going to depend on your own recipe. I've definitely done it with carrot cake without any issues, the dowels/ boards do help with structure to hold everything together as well, but if your recipe is a bit prone to falling apart it might be best to avoid it.

    Great video and beautiful cake. Would this cake hold up at an outdoor party in August. It'll be assembled the day before and in the fridge up until the party starts and then served probably 1 hour after the party begins. It'll be in a cooler until its served.

      Yep, that should be fine! I usually suggest letting the cakes come to room temperature before they're served anyway, as otherwise cakes can often seem hard or dry when they're cold 😊

      Hi Christina, I've got a couple of different doweling videos planned (including for tiered cakes). I'm not really sharing my personal recipes at the moment, but can definitely look into doing a video on how to adapt different batch sizes to suit your cake tin sizes :)

    How would I separate the chocolate and vanilla cakes to serve both at the same time? I wouldn’t want someone who wanted vanilla to have to wait till the chocolate is served.

      You could slide your knife under the centre cake board all the way around and remove the top cake 😊

    So you don't have to have a center dowel to go through all 6 layers?
    I keep getting confused bc another person said it's imperative to have that center dowel for all layers.

      It can definitely be confusing, because everyone has different methods and ways of doing things. I don't central dowel my double barrel cakes, but I do for my tiered cakes 😊

      Yeah, definitely have a bit of a play and do what works for you 😊 having those dowels in the bottom layer and having the cake nice and stable from refrigeration will be a great start for good structure, but that central dowel won't hurt either!

      I think my dowels are from My Dream Cake, and I've actually just discovered that using a pipe cutter is super handy for cutting dowels!

      @@briannaaldava8034 Yep, 6 layers of 6" wide cake (you can bake these layers seperately, or in one big cake and torte them). Each of my layers is roughly 1.5" tall.

    Can we use fresh cream inside layers for filling

      I personally don't use fresh cream as it's not as stable as buttercream, especially for a really tall cake like this one. If you are wanting to try it out, I would suggest stabilising it in some way (try gelatine or even cream cheese), but I personally would much rather play it safe and use buttercream or ganache :)

      Hey :) my cake layers are usually about one and a half inches tall each, and I do 3 layers for a standard cake and 6 for a double barrel.
