For anyone thinking “I want this, but don’t want to make an entire cake”, make individual ones in Dixie Cups. You can decide whether or not you want to carefully slice off the cup once they’re set; after all, you are the Don Draper of cups made from paper. Also, Oreo Thins are perfect for this kind of recipe.
In Brazil, ice box cakes are called pavê. Which sounds like "pra ver" (for seeing). So people make this dumb pun asking if it is for seeing or for eating ("pra comer"). It's every old uncle's job to make this joke. We even call these types of puns "old uncle's pavê jokes" (piadas de tiozão do pavê).
A biscoff would be good too. I am thinking of trying biscoff with some almond extract. It’s peach season here. Sliced fresh on the side would taste great.
@@readytogo3186 if there’s too many people there, it can start to rain if that’s what ur referring to. Idk if u like pancakes or waffles in the morning, but I’m more of a steak and eggs guy
YUM! Will definitely be trying this. My current favourite dessert is one my mom has been making my whole life, which is basically this recipe except with ginger snaps, then layers of sliced banana and layers of whipped cream. But mocha is one of my favourite flavours. Thanks Chef!
Used to make this all the time. They sold "Icebox Cookies" at the store that were rectangular but were basically Oreo cookies without the cream. Now you can buy 6" Oreo rounds to make ice cream sandwiches, but it works perfectly for this recipe.
This is the kind of Chef John recipe that makes me wonder how wise I was to subscribe. I could only make this if I knew a crowd of people was about to descend on my kitchen when I removed it from the icebox.
You have given me an idea. My husband wants me to do something with ginger snaps. I have spent all summer trying to perfect a peach custard to make peach pudding with ginger snaps. He is not a cake person, but he may love this with ginger snaps.

You will be totally loka, if you dont make this Mocha....cake. Thanks for the wonderful and seemingly easy recipe Chef John, can't wait to make it soon!
I made this ... with a fair amount of mistakes ... and it still came out wonderful! I couldn't find any cookies like you mentioned so used a generic chocolate graham cracker. Pain in the petunia to break and fit in a round pan, but I managed. Also, I forgot the cream and ended up adding it after the cream cheese. However, I think this mistake actually worked better because I didn't have to worry about over-beating. It was a big hit with the family and our visiting guests. Thank you!
Icebox cake is my favorite! Thanks for the recipe. The cookies I used to use to make this cake are no longer available- I am going to try it with another brand. That mocha icebox cake looks delicious!
Chef John, ever hear of a Jello Refrigerator Cake? My mom made them for me for my birthday in the hot northern Calfiornia summers. Make a Lemon pound cake poke it full of holes, then pour hot lime jello over the top and put it in the refer to chill/firm. Then ice. Serve cold with ice cream!
My mother made something similar to this, just bake a white cake in a single layer (9x13?) then poke holes in it and pour a box of hot cherry jello over it and put it the refrigerator to set up. After it’s chilled she would put marshmallow cream on top for a frosting. Man, those were good! Thanks for the memory!
Honestly, I danced a Polka When I saw Chef John was using Moccha And overjoyed was I seeing it was a cake That as preparation we wouldn't have to bake And I am the Jamie Foxx Of making it in an Icebox But what was really unnerving To see he made an individual serving
My favorite cakes are Tiramisu and a dark mocha chocolate cake with pudding-buttercreme, this recipe feels like a combination of both! Definitely gonna try this!
Love your videos and I will try this. However I have a special pound cake I love and is the cake I make exclusively for myself and for my family. Actually I gave the recipe to my oldest son as a birthday present. He knew it was special and loved the present.
I grew up with icebox cake; Nabisco's 'Famous" chocolate wafers were the crisp cookie of choice. Nabisco sadly stopped making them. If you google 'chocolate wafer cookies' you'll get a bunch of recipes to replicate them.
I just made this Hopefully I'll awaken to Chef Johns Ice Box Cake . . Chef John, number one. I'm just putting on the pounds, one by one ...I am the dude of my food.... 😅
I love icebox cakes! I will have to try this one. Have you tried a Maria Lime ice box cake or a Chocotorta ? (I know it's technically not an ice box cake but it's no bake as well)
This is very similar to Ina Gartens Mocha Icebox cake too. She also uses 3 bags Tates 8 oz. However, not everyone has access to Tates which are now 7 oz bags. Do you have other options since Tates are a unique texture and taste? I thought of thin oreos but wondered if they would turn cake-like or if they are too strong. Sometimes Oreo based dessert can taste all Oreo tasting!! Wafers would probably turn mushy, lost for choices or ideas.
Possible option for a fancy presentation: Instead of filling between the whole cookies on top with pieces, wait until ready to serve and fill in the spaces with berries.

I've watched chef John for nearly a decade now. Love his cheery attitude towards cooking and the sign off 😊
As soon as you said the cookies should be crispy, my mind went to gingersnaps.
This would be amazing with gingersnaps and pumpkin mousse!
I love gingersnaps. My goto BISCUIT!
Gonna add that to a thanksgiving bake list... Or not-bake list lol!!
A biscoff would be good too. I am thinking of trying biscoff with some almond extract. It’s peach season here. Sliced fresh on the side would taste great.
Ooh...I bet my daughter would love that.
Well, you are after all The Dude of what goes in your food.
I think I could stop with making the mousse and be happy just eating that.
You are, after all, the Sir Francis Drake of your Mocha Chip Ice Box Cake.
Good one
I prefer it without the Swiss cheese tho, not a big fan of Swiss. I’d do cheddar or American
@@readytogo3186 it depends, how many have u ate?
@@Jake-bk4wh His recipe has nothing to do with how many I have eaten. I was just asking when he said the recipe contained Swiss cheese.

So, this is like tiramisu but more approachable. I would love to try this. Thank you, Chef John!
yes, they are, and fantastic, you must try making one!
I do so miss the Nabisco's Famous Wafers that were the staple of these kinds of icebox cakes for decades until the discontinued them.
Those were the best, I have found nothing that quite substitutes for them
Chef John your creations do things to my insides I never though possible, you're a dangerous man.
That sounds kinda naughty 😂

Mine too. My mum used to make when I was a little girl. Shaped it into a long log and decorated it with chocolate buttons turning it into a hedgehog!!

Love watching and great cheffing!
Looks amazing. A must try.
This is almost a tiramisu, still looks great even if different!
Yum, yes I love "coffee" cakes.
You've given me an idea: why does toothpaste not come with a star tip? That could be fun, and maybe enhance our toothbrushing experience.
Excellent idea!
I'd buy that.
It does. And it's sparkly and tastes like bubblegum
Reminds me of tiramisu. This should be awesome.

Thanks for this! It has given me lots of good sounding ideas. Peanut butter mousse with the chocolate chocolate chip cookie. 😋
It looks great, but it's so hot out I might just put it all together and then set myself into the fridge for 24 hours instead.

I wonder if cold breakfast cereals like Cinnamon Toast Crunch, PB Cap’n Crunch, or berry-flavored cereals could be subbed for cookies.
