Perfect! I'm sure it can. The first time I made if for folks, I made it the day before, and just heated it in an Instant Pot (warm setting) at the party. I bet this would freeze amazingly, though. Let me know how it turns out.
I made this and froze some individual servings. Just had one of the frozen ones heated in the microwave and it was just as delicious as when it was first made. This chowder is so good😋
Thanks! I'm not sure of the properties of arrowroot... Isn't it a bit gummy like tapioca? I think a GF flour blend would be better, or even just something like potato or corn starch. You could even just omit it. The sweet potato does a good job of thickening. Or, you could add a bit extra of just white potato to help as well.

I am not a soup fan either but will be trying more this winter. Would adding smoked paprika or a dash of liquid smoke be out of the question? Or maybe roasted red peppers? I must've had a bacon corn chowder in the past because I associate Corn Chowder with a smoky flavour. I am newly WFPB. I will be trying this either way.

Sorry to be a boring European but our choices of peppers / chilis are limited. What are possible substitutes for poblano peppers? As I have never heard of them I love autumnal (fall) soups and this seems a good staple.
I would say that you could use any type of not-too-spicy green pepper. Bell pepper? I think poblano also goes by ancho in other parts of the world? If you just weren't able to find any peppers that fit that description, then you could just omit them. I think a bit of red bell pepper would be nice, but it'll still be a great soup even without the poblano.

A few weeks ago I made a similar recipe but much simpler because I didn't add poblanos nor sweet potato, just a corn chowder. I can't get poblanos here but I'll definitely add some sweet potatoes the next time I make it, sounds delicious!
The mind is a strange place. haha. Ben is kind of the same way. He swears he hates it, but when he eats it, he normally enjoys it. He says soups are "boring"... not sure what that's rooted in.
