@@PaladinFury I love how many of these channels are friendly with each other and like and support each other, even though some of them are completely different they're still so similar. Sometimes the YT algorithm works great at connecting channels together.

Before watching this series of videos I had no idea how much my life suffered from a lack of lamination. Seriously, I always find myself smiling watching Alex make DIY cooking contraptions. Thanks for making and sharing.
When I first saw that Alex is doing a croissant series, don’t be offended by this, but I wasn’t thatttt excited. Because so many other amazing food UA-camrs have already showed great techniques on their croissant videos. But thennnn Alex just took this croissant series on a tangent, took it to a whole nother level. Shouldn’t have doubted for one second that you would make great, original content :D
Plus : I'm not sure you can grasp the whole croissant thing when you were not raised by the croissant as we are in France. I never found a sole edible one in the countries I visited

Haha, for a second I thought you were gonna have a Clickspring moment when you cut the gears by hand. And then you used a CNC and I cheered :P
If you wanted smoother gears, I would use a polymer like Delrin or UHMW PE. They have a lot less friction, are non absorbent, and will wear better over time.
Also while you had access to a fab lab, I would recommend making a small drilling guide for center drilling dowels. When I was making my wooden lightsaber, I made a series of circles that I then stacked into a tube. At one end, I put a cap on it that had a hole drilled perfectly centered. The little jig slides over an appropriate sized dowel and holds your drill bit in place while you start the hole.
I imagine if he used better gears it'd be on a frame that's also a lot better too. Wooden ones would work fine
Clickspring is satisfying in the same way cooking shows are. I swear to god all those brass shavings make me hungry.
Merci Winston, I love this. About the jig, it sounds great, would fix the centering for sure, but the rollers themselves are wobbly/unbalanced ... It's not that big of a problem when I am flattening over 10mm, but as soon as I get closer to 4 it does become a bit annoying.

@@FrenchGuyCooking Also, I used to make a lot or mdf gears for teaching kids at a museum. One of the things i'd do on gears i wanted to be longer running but still cheaper than delrin is just get a big cheap bottle of ca glue and pour it on the teeth so they saturate a bit. Just make sure to keep running it slowly until the glue sets all the way :P it spreads the glue evenly and keeps them from seizing. It's kind of like tempering just the teeth :P

Step one: defeat the Ottomans.
For about 10 croissants : (metric system)
500g of flour
300ml of milk
50g of sugar
12g of salt
15g of fresh yeast (You have to dilute the yeast with the milk. The milk has to be at a temperature of 25°C to activate the yeast.)
190g of butter (for the turning)
Egg yolk and/or milk to glaze before baking
You are truly an inspiration. Even to those who do not cook. I love how you have an idea and make it happen instead of just having an unfulfilled dream. I need to adopt that mentality.

Alex my dude - you need to buy a 3D Printer! I have a Tevo Tornado and it's cheap, easy to use an it makes things like gears super simple.
We didn't get to see the croissant you made baked though. One of the satisfying things of your vids are that you usually end up making food with whatever you did in the video. I wanted to see if the inside of that croissant looked the same as the on in the bakery.

me and my step father have been planning to build a dough sheeter for years, not only for croissant but for bread making in general, this one looks like the perfect one for us, but he doesn't speak any English or French so HERE COME SPANISH SUBTITLES. The only change is that we'll probably do the gears by hand and use a handle instead of a drill

I drool over every croissant episode. For your machine you might want to replace the plywood with melamine laminate to prevent any sticking food from picking up wood splinters especially since you cut on it.
As you were cutting the dough on the board i couldnt help but be distracted by the thought of someone getting a splinter in their tongue. Yikes.
