I love the flavor of these dumplings, but I have a few notes on this recipe after experimenting with them for a few months: You don't need the teaspoons of salt, believe me the soy sauce and oyster sauce make up for it and it may overshadow the flavor of the meat and other flavors. This exact recipe makes a lot of dumplings, about 30 something depending on how much filling you use. If you plan on buying your dumpling skins to save time, buy two packs just to be safe. If you want to have a stronger ginger flavor in your dumplings I suggest you grate it into the meat mixture instead of mincing it. Grating a few cloves of garlic into the mix also makes it taste very good. Ground pork or chicken can also be used as a substitute for the beef. Though the chicken dumpling tastes better without any other type of meat in it. You can also cook these by pan frying them, it gives the dumpling a nice crispy bottom.

Buy a cheap $5 metal steamer basket, brush it with some sesame oil, and use that to steam. 4. If you have an air fryer, you owe it to yourself to finish them in there. SO GOOD. Steam them for 6 minutes, and then pop them in the air fryer at the highest temp for 5 minutes to crisp them up. They become crispy but still chewy, it's insane. 5. use about 3/4 as much sesame oil as the recipe suggests, same effect but less guilt after. also use just a splash of sesame oil in the dipping sauce.
