DRAGON DUMPLINGS from Kung Fu Panda, Chinese New Year | Feast of Fiction

    Dragon Sized Dumplings:
    Dumpling and dough ingredients:
    9 shrimp
    2 stalks of green onion
    1 inch (2.54 cm) of ginger root
    1 1/2 cups (350mL) celery (blanched and processed)
    3/4 lb (335g) ground beef
    2 1/2 (595 mL) cups of flour
    1/4 cup (60 mL) vegetable oil
    1 tbsp (15 mL) soy sauce
    1 cup (240 mL) bamboo shoots
    1 tbsp (15 mL) of Panda brand Oyster sauce
    2 tsp (10 mL) of salt
    Dipping sauce ingredients:
    1 part Black rice vinegar
    2 parts Soy Sauce
    1 part Sesame oil
    Dumpling filling:
    - Mince the green onions and ginger
    - Butterfly the shrimp and dice into small bits
    - Dice the bamboo shoots
    - Squeeze out the liquid from the blanched and food processed celery into a large mixing bowl onto the ground beef
    - Add in ginger and green and onion to mixture and stir until liquid has been soaked up
    - Add vegetable oil, soy sauce, oyster sauce, salt, shrimp, and bamboo shoots
    - Mix thoroughly
    - Pour in remaining celery and continue to mix ingredients in
    Dumpling dough:
    - Mix the flour with one cup (240mL) of warm water. Stir and knead until combined. Cover and let sit overnight.
    - Cut dough into slices and roll out into tubes
    - Cut off small sections of the dough, one per each dumpling
    - Flour your working surface
    - Press dough out onto surface, with a rolling pin, work your way around the dough and flatten it into a small circle. Make it as thin and flat as possible
    Creating the dumpling:
    - Dollop out a small amount of mixture onto the dumpling
    - Take one side of the dough and fold it over the dumpling. Carefully work your way around both edges, being careful to not press any mixture between the folds
    - When you've finished, close off the seams one more time for extra security.
    - Follow the same steps to create a massive dragon dumpling, except when closing this off, take one side and begin working clockwise or counterclockwise from that spot, folding the dough over itself until you've wrapped it entirely.
    Cooking the dumpling:
    - For regular dumplings, bring a pot of water to boil and drop them in.
    - They will be ready when they float to the top and have small wrinkles in them and are slightly transparent
    - For dragon sized dumplings, pour water into a steamer and place the dumpling on top of a bed of lettuce on a ceramic plate.
    - Bring the water to a boil and place the dumpling inside, closing the lid. Let it steam for 15-20 minutes.
    Making dipping sauce:
    - Combine 1 parts black rice vinegar, 2 parts soy sauce, and 1 part sesame oil. Mix together.
    - To add extra spiciness, try stirring in some red chili paste.
    Serve hot and eat up! Happy new year!

      That's kind of a fact, for my family atleast. Every girl in my moms culture learns how to cook when they're as young as 7. And then turn out to be pro chefs when they're older. I'm just here still trying to figure out how to cut an apple

      my dad and mom learn to cook at a pretty young age bcos their parents are always working and they need to fill up themselves with several siblings. so my parents teach me and my sis cook when we were young too.i started using a knife when i was 5 no kidding i was standing on a stool to chop the veges. although they say its for the the survivals of not getting starved to death, but i enjoyed it alot.

      their stomachs are designed for eating meat, thats why most of their poo consists of undigested not digested bamboo. iirc they started eating bamboo... 2 million? years ago, idk wtf evolution was doing.

      Yeah I agree, but I don't have chopsticks, so I use a fondu fork in Asian cooking and eating. Is that okay?

    I love the flavor of these dumplings, but I have a few notes on this recipe after experimenting with them for a few months:
    You don't need the teaspoons of salt, believe me the soy sauce and oyster sauce make up for it and it may overshadow the flavor of the meat and other flavors.
    This exact recipe makes a lot of dumplings, about 30 something depending on how much filling you use. If you plan on buying your dumpling skins to save time, buy two packs just to be safe.
    If you want to have a stronger ginger flavor in your dumplings I suggest you grate it into the meat mixture instead of mincing it. Grating a few cloves of garlic into the mix also makes it taste very good.
    Ground pork or chicken can also be used as a substitute for the beef. Though the chicken dumpling tastes better without any other type of meat in it.
    You can also cook these by pan frying them, it gives the dumpling a nice crispy bottom.

      Denise Pena No you don't have to add the ginger. It's used to give the dumplings a more aromatic flavor but you can make these without it and they'll still turn out delicious. Hope this helped :)

    I've made this recipe at least 10 times over 4 years and it's amazing. It was the first time I cooked for my family! The recipe is really really hard to mess up. The only things I do differently now:
    1. After deshelling and deveining the shrimp, freeze them for about an hour (or until solid) and throw them in a food processor. It'll make tiny shrimp cubes and it's way less annoyance than butterflying and dicing. If they arent frozen then processing them makes a paste, which isn't as good for mixing but still passable.
    2. Buy dumpling skins, don't make them. Trust me. Gyoza No Kawa (in Japanese) is the best wrapper, or Dynasty Gyoza/Potsticker Wrappers are a close second.
    3. STEAM, do not boil. This masterful asian mom probably seals these dumplings like nobody's business, but for you and I, our seals suck. Boiling them dilutes the flavor. Buy a cheap $5 metal steamer basket, brush it with some sesame oil, and use that to steam.
    4. If you have an air fryer, you owe it to yourself to finish them in there. SO GOOD. Steam them for 6 minutes, and then pop them in the air fryer at the highest temp for 5 minutes to crisp them up. They become crispy but still chewy, it's insane.
    5. use about 3/4 as much sesame oil as the recipe suggests, same effect but less guilt after. also use just a splash of sesame oil in the dipping sauce.

    Is it possible to make these without shrimp? Is there any alternatives, like crab meat or something? (I'm just not fond of shrimp is all.)

      I would say it's probably completely optional. It's not really a major part of the inside mixture, I think it's just for extra flavor. Technically you can use any meats for fillings. ^w^
