I was wondering how you managed to leave out Shane Williams and then read the title properly! You could do a whole video on Shane's and Gerald Davies' sidesteps (as we used to call them!!!). A great comment in, I think, the Daily Telegraph many years ago (1970ish?) when London Welsh beat Bristol and Gerald Davies had scored a few tries beating Peter Knight the full back in the process, was along the lines of: "At the final whistle, Peter Knight went to shake hands with Gerald Davies and missed him then as well!".
