Alexandra Pippan I recommend ermine buttercream (flour frosting), I have been using ermine buttercream and it’s really nice. Very airy and it doesn’t tast like butter :)

Just thought I'd say that if you add butter to the 'Italian Meringue', it's called 'Italian Meringue Buttercream'. Swiss and Italian buttercreams have similar ingredients but different methods when making them. Swiss does not use sugar syrup, that's why more people prefer Swiss buttercream to Italian (and French) because they find making the sugar syrup a bit challenging.
Your American buttercream has a grainy texture because 1. Your butter wasn't nearly soft enough and you really have to cream it until it's very pale before continuing and 2. because you added the icing sugar too fast. To avoid that graininess you start with really soft butter, cream it well and alternate small quantities of the sugar and milk until it's all incorporated. It's still sweet but it will be soft and smooth.
i like the orange tee boy. he's got great taste bud for a kid. he doesnt go crazy about sweet stuffs like normal kids and even tho he might be new to cream cheese buttercream and finds it a little strange, he knows how to appreciate it. The fact that almost everyone gave the American buttercream a higher score than the smoother and more balanced buttercreams hurt my soul a little. I get they all grew up with it but so did I and I can still recognize that if a frosting is so sweet and gritty you can't finish a slice of cake because of it, that's not a good frosting

As a brazilian, it’s so hard for me to understand buttercream and cream cheese + sugar (frosting, cheesecake, etc). However, I love ganache, meringue and whipped cream to death. It’s nice how our culture shape our food taste.

+Jacob Wilson no that's a different recipe. The adding of the butter does not make it Swiss, it's the type of meringue used that will differentiate whether it is a Swiss buttercream or Italian. Swiss meringue buttercream is made with Swiss meringue which is when the eggs and sugar are cooked together in a bowl over some simmering water, or a double boiler until a certain temp is reached, then it is beat until stiff peaks are reached, then butter is added... Italian meringue buttercream is Italian meringue based, and it is what happened in the video.

Just when I had given up knowing how they all TASTE! Thanks so much for the variety of tasters, too. I learned who to listen to based on our similar palates and it wasn't always the adults, lol. Only one thing - the one you called Swiss was actually Italian. (Swiss heats and whisks the egg whites and sugar first over a water bath then beats them and adds butter.) That only matters to me because it's the one I've been planning to try first. Doesn't take away from your AMAZING video, however. Even showing effects of heat and fondant! Really - thanks so much!
I have never used granulated sugar in my buttercream frosting and I am from America. I have ALWAYS used confectioners (powdered sugar). Of course using regular sugar would make it grainy!

Wow, kids have a completely different sense of taste. Or at the very least these kids do. I thought the cream cheese icing was going to be the favorite (cause it is the one I think is best) and the kids didn't like it at all. Very surprising.
What if the quality of vanilla and butter used was better? I wonder if it would be more appealing to kids. I'm still torn as to what frosting I'd use for kids. Maybe a modified French butter cream that's sweeter?
The kids are the best cake testers because then we will know what they like ,my kids are very fussy when it comes to butter cream so I have to make it like they like it, happy tummys happy kids :) great job!!
One of my biggest peeves about American buttercream is it always ends up tasting too buttery when I make it and I never really like it. Ironically, though, my new favorite kind of icing is French buttercream. I just use roughly half the amount of butter that the recipe calls for and add milk+powdered sugar as needed for consistency, and it hits all the right notes for me. Has the sweetness of American buttercream, firm enough to make solid layers (especially when chilled), and -most importantly- can barely taste the butter!
I've made buttercream with just butter and sugar before. And cream cheese with just cream cheese and sugar. I will be giving some of these recipes a try because I need some variation when making cakes and cupcakes for little ones lol

+How To Cook That Just a little advise. Salt make the whiped albumen structure more unstable. If you use an acid like lemon juice the albumen will lose less water.
Thank you Ann for another great video! I found that adding 4 heaping tablespoons of crisco to the American buttercream softened the sweetness perfectly. I'm in Australia and get the crisco from cake decorating shops.
it is good for adults. Children have sweet-tooth so they prefer something really sweet like close to candy-like flavour or very sugary food. That's why they like the meringue. I love cream cheese frosting especially in carrot cake
I love to make Swiis buttercream and add powdered sugar for stability and sweetness. Ermine frosting tastes like ice-cream to me. It's SO good with red velvet!

Even as a kid I hated sickly sweet buttercream and fondant (unless it was chocolate flavour which reduced the sweetness a bit)
For children, give them straight sugar. For asain parents, give them anything not sweet. Like a cracker or something.

As a brazilian, it’s so hard for me to understand buttercream and cream cheese + sugar (frosting, cheesecake, etc). However, I love ganache, meringue and whipped cream to death. It’s nice how our culture shape our food taste.

+Jacob Wilson no that's a different recipe. The adding of the butter does not make it Swiss, it's the type of meringue used that will differentiate whether it is a Swiss buttercream or Italian. Swiss meringue buttercream is made with Swiss meringue which is when the eggs and sugar are cooked together in a bowl over some simmering water, or a double boiler until a certain temp is reached, then it is beat until stiff peaks are reached, then butter is added... Italian meringue buttercream is Italian meringue based, and it is what happened in the video.

Just when I had given up knowing how they all TASTE! Thanks so much for the variety of tasters, too. I learned who to listen to based on our similar palates and it wasn't always the adults, lol. Only one thing - the one you called Swiss was actually Italian. (Swiss heats and whisks the egg whites and sugar first over a water bath then beats them and adds butter.) That only matters to me because it's the one I've been planning to try first. Doesn't take away from your AMAZING video, however. Even showing effects of heat and fondant! Really - thanks so much!

I have never used granulated sugar in my buttercream frosting and I am from America. I have ALWAYS used confectioners (powdered sugar). Of course using regular sugar would make it grainy!

Wow, kids have a completely different sense of taste. Or at the very least these kids do. I thought the cream cheese icing was going to be the favorite (cause it is the one I think is best) and the kids didn't like it at all. Very surprising.

What if the quality of vanilla and butter used was better? I wonder if it would be more appealing to kids. I'm still torn as to what frosting I'd use for kids. Maybe a modified French butter cream that's sweeter?

The kids are the best cake testers because then we will know what they like ,my kids are very fussy when it comes to butter cream so I have to make it like they like it, happy tummys happy kids :) great job!!

i would have included a german buttercream. its made with vanilla pudding and butter basically. i think the kids would love it.
One of my biggest peeves about American buttercream is it always ends up tasting too buttery when I make it and I never really like it. Ironically, though, my new favorite kind of icing is French buttercream. I just use roughly half the amount of butter that the recipe calls for and add milk+powdered sugar as needed for consistency, and it hits all the right notes for me. Has the sweetness of American buttercream, firm enough to make solid layers (especially when chilled), and -most importantly- can barely taste the butter!
I would have rated the cream cheese frosting a 8 out of 5 cause I loveeee it!!!!
funny, I'm from switzerland and I didn't even know we had a own "swiss recipe" for frosting...... and none of my friends knew that either. XD
I've made buttercream with just butter and sugar before. And cream cheese with just cream cheese and sugar. I will be giving some of these recipes a try because I need some variation when making cakes and cupcakes for little ones lol

+How To Cook That Just a little advise. Salt make the whiped albumen structure more unstable. If you use an acid like lemon juice the albumen will lose less water.

I found that adding 4 heaping tablespoons of crisco to the American buttercream softened the sweetness perfectly. I'm in Australia and get the crisco from cake decorating shops.

it is good for adults. Children have sweet-tooth so they prefer something really sweet like close to candy-like flavour or very sugary food. That's why they like the meringue. I love cream cheese frosting especially in carrot cake
