- A tagine is a pot with a domed top that captures condensation from cooked meat and returns water to the bowl beneath the dome so the meat does not dry out. This video shows how to cook lamb using a tagine, resulting in more tender meat than would result from other methods of cooking.
This pot was used by indigenous people of Northern Africa, and is still used today in Morocco. The lamb tagine recipe I prepared for the video is also called mrouzia, which is distinguished by its combination of lamb with a variety of sweet elements, such as honey, raisins, apricots, plums and/or prunes.
Ingredients for the mrouzia recipe I prepared are as follows.
For lamb marination:
2 lbs Lamb
1 tbsp Ras El Hanout
1 tbsp Ginger & Garlic Paste
1 tsp Salt
1 tsp Pepper
1 tsp Turmeric
5-7 threads or strings of Saffron
1 tbsp Unsalted Butter
2 tbsp Honey
1 tbsp Olive Oil
When cooking the meat, add the following to the tagine:
1 Onion
1 tbsp Cooking Oil
2 Cinnamon Sticks
1/2 cup Water
Ingredients added to the tagine after meat is cooked for two hours:
1/2 cup Golden Raisins
1/2 cup Dried Plums
Additional ingredients for decoration on top:
1/2 cup Almonds (stir fried in 1 tbsp of Cooking Oil)
1/2 cup of Dried Apricots
