I imagine many anthro departments offer GIS training, but I'm interested in places that specifically focus on the overlap of GIS/geo and anthro.

Thanks! In regards to a webGIS platform, probably nothing as robust as you're thinking of. I do have a couple of videos about creating webmaps from QGIS. They are in the same playlist as this video.

You should be able to use the (re)project tool to assign a metric coordinate system (UTM, etc.).
