Pizza John's is a self-service Italian restaurant and Carry Out located in Essex, Maryland. We were established in 1966 and have been family-owned and operated since. Our belief is that fresh is best - fresh dough for pizza, fresh grated cheeses, and slow-cooked homemade sauces. We even use fresh butcher-cut meat in preparing our food. With our 2012 expansion and renovation, we can seat over 300 guests in 5 dining rooms.

From a chefs point of view the organisation with regards prep, is amazing.
Hands down the best pizza in the world if you ever visit Baltimore you should stop here you wont be disappointed I promise ya I been all over and never ate pizza as good as this
You must not have been down eastern avenue though. “I been all over the world, I been to Zambooka and France”. But you never must have went to Mathews or Angelis. You can drive 20 mins from PJ and get three to four spots that will smoke em.

That’s the problem. It’s a factory. I like a clean place but don’t be cleaning next to me while I’m eating. I can barely smell pizza when I go there. All I smell is bleach it’s disgusting.
On the pizza side.... I love extra cheese but this is overboard. If you don’t wait five Mins to cut it, the joint will fall apart and it’s too greasy. Them pepperonis are greasy tea cups.

They really oversold the Italian schtick, for sure. I have a lot of experience making pizza in the US to several different standards, including Napoletana from Italy using an imported wood-fire oven as well as a few different "American" / bar-food spins (all tasty in their own ways, though I do prefer Napoletana at the end of the day). I think the point of this video is that a gigantic, essentially fast food pizza place has roots as an old family business and they stay true to their family *recipes*. Meaning the ingredients are cut fresh, even if it's in massive bulk by a dozen kids using machinery. I would never flatten my meticulously cured dough in a roller just to pinch little ripples in it and call it "thick crust", but that's just me. East Coast US pizza has it's own particularities and it's hard to hate on them as "inauthentic" because Italian immigrants developed these styles. They did it in the name of upscaling, while catering to the flavor preferences of an American audience. You can be snooty about that, but it's really just different strokes for different folks. As an aspiring restauranteur, I'm frankly impressed by their level of quality control & consistency churning out pizza on that scale. Cool machines. I've never tasted it, I think I can imagine what it tastes like, and I wouldn't make pizza that way... and, yeah, they're really overselling the Italian stuff given the style of the restaurant... but, hey, it's a marketing schtick and it obviously works well for them.

I agree with what you are saying, they play that up and 8/10 ppl working there aren’t Italian at all. When I used to go there an Indian guy was making pizzas(haven’t been in a while and I don’t miss it)

At 2:49 it shows them making DICED bell pepper, then a second later, it shows a salad with SLICED bell pepper.
Diced is the pizza topping.
@@rodneyatkins8515 No, I worked for *_Papa John's_* for five years... each company does it differently. Altho, it probably comes down to personal preference for the customer.
But for the person actually CUTTING the veggies, DICED is the lazy way. I've used that exact same dicer on tomatos... if he would have flipped the bell peppers over, he would have had less trouble getting them to go thru the blades. He had to jam on that thing _twice_ in order to force them thru. *_Papa John's_* used to do sliced tomatos, then they changed to doing diced tomatos. PJ's also does sliced onion & bell pepper. If i remember correct, Domino's shows sliced onion on their website, but the local store does it diced... probably because they're lazy. Like I said, there probably isn't a "correct" way... the "best" way would probably depend on the combination of toppings. Like, a *_St.Louis_* style pizza... if you're doing bacon, the large slices are probably better, imo. But if you're getting a bunch of other toppings, crumbled bacon bits (the good stuff) would probably meld together better with the other toppings. Probably likewise with onion & bell pepper... if you're staying within the 1,2,3 topping range, i'd say sliced... but if you're dumping everything and the kitchen sink on it... then probably diced is better.

I'm not making a statement about the relative merits of different forms of peppers as a pizza topping.
