  • Crispy and chewy Dinner Roll Bread that anyone can make quickly and easily.
    It has a light taste with a recipe close to baguette.
    The fresh and savory taste of isgny butter stimulates the appetite.(๑•᎑•๑)
    The pans I used are Lloyd Detroit Style Pizza Pans 8x10 inches.

    ■ Dough formulation : about 567g
    (B's (%) = Baker's Percentage = Bakers Percent)
    (Tr (g) = actual input amount = Truth Input)
    B's(%): 40.0%, Tr(g): 116.0g Water (40℃)
    B's(%): 40.0%, Tr(g): 116.0g Milk (2℃)
    B's(%): 1.45%, Tr(g): 4.2g Instant Dry Yeast
    B's(%): 5.0%, Tr(g): 14.5g Sugar
    B's(%): 2.0%, Tr(g): 5.8g Salt
    B's(%): 7.0%, Tr(g): 20.3g isgny Butter
    B's(%): 100.0%, Tr(g): 290.0g Strong Wheat Flour (Bread Flour)
    ■ Process|Room temperature: 22℃
    1. Put 116g of water in a bowl.
    2. Add 116g of milk.
    3. Add 4.2g of instant dry yeast and mix well.
    4. After adding 14.5g of sugar, dissolve in water.
    5. After adding 5.8g of salt, dissolve in water.
    6. Add 20.3g of melted isgny butter (35℃).
    7. After adding 290g of strong wheat flour,
    Mix evenly until no flour is visible. (Dough temperature 23.7℃)
    8. After fermentation for 2 hours and 40 minutes, the first fold (folding)
    9. Rest for 20 minutes
    10. Final molding: Refer to the video
    11. Second fermentation: 2 hours and 20 minutes at room temperature
    12. Put the dough into the Rofco oven preheated to 200℃
    13. Adjust oven dial to 190℃
    14. Total baking time: 19 minutes
    ■ Precautions: Always be careful when using the oven
    (Because it is very hot, use it after wearing very thick oven gloves)

    맛나겠네요.요거 만들어 봐야징...
    노년기엔 빵을 먹고 싶어도 소화가 잘 안되서 못먹어요
    노인들 소화잘되는 노인전용 빵 만들기 전문으로
    하면 젊은이들이 부모님께 만들어 드리면 좋을텐데...
    후라이팬에 굽는 빵도 많이 있던데.....
    휴업 ,폐업 이신가요???잘 놀았어요 🍀🍀🍀🍀

    먹글링님 초보적인 질문이지만, 사용하시고 계시는 오븐은 하드브레드 전용 오븐이라고 봐도 되는걸까요?
    저 오븐으로는 마들렌이나 이런 빵을 만드는건 잘 안되나요? 잘 몰라서 질문 드려봐요

      안녕하세요^^ 하드브레드도 잘 나오는 오븐 같아요. 일반적인 단과자빵, 식빵들도 무난하게 나오는 것 같구요. 마들렌 같은 케이크류는 만들어보지 않아서 답변을 못드려요 ㅠㅠ 시청해주셔서 감사합니다! 새해 복 많이 받으세요!
