For those of you who live in the United States, Target sells Lucky Foods Seoul Kimchi and it is certified kosher by KSA. It is even in my small town. I think it tastes great. It tastes like the kimchi I make myself but is more convenient. The recipe I follow when I make it myself is somewhat different than Meorah's so I don't know how authentic it is but there does seem to be many types of kimchi. Kimchi has many health benefits. Try some kimchi with your gefilte fish Friday night!
I have made my own kimchi with napa cabbage. I live in a small town in Missouri and I couldn't find gochugaru (so I thought). On a trip to the Chicago area, I went to H-Mart and was overwhelmed by the choices. I asked a woman and she made some recommendations and I bought the gochugaru which has a nice flavor and not as hot as you might think. The funny thing is that I later found gochugaru in my small town and it had been there the whole time but the writing on the package was all in Korean and no one at the local store knew exactly what it was.
Have you gone to Seoul House in the old city? The owner has a whole line of kosher Korean products she sells, in addition to the pescatarian kosher restaurant (which was very tasty when I went a few years ago). She's also a Korean American Jew! I've found Nappa (and kosher Gochujang) at בלאגן on Aggripas. They have Gochugaru without a hashgacha, but I asked my rabbi and the brand they carry should be OK kashrutwise. ☺️ (there could be a kashrut issue with dried peppers, I don't remember the specifics)
I know that is said to work when you make pickles. It might add unwanted flavors to kimchi and it would be more difficult to remove bay leaves from the kimchi.
@@stephenfisher3721 You don't need much of them, only like 1-2 leaves per kilo of vegetables, when I use them I grind them with the salt in a coffee grinder and they turn to powder that you don't need to remove. You can also use tea leaves or grape leaves instead. (It's all about the tannin content anyway, that is what protect the crunch).

Vegan doesn't make it Kosher. In fruits and veggies, there are specific rules that determine if it's Kosher, but the truth is that most of us are not that strict about it (as long as it is clean from bugs).
Raw unprocessed fruits and vegetables, even grapes, have no inherent kashrut issues as long as you don't eat any bugs by accident as you mentioned (but that's not the fruit that's a bug kashrut issue). In Israel you have an added need to do trumot and maasrot, and there's an issue with tevel and shmita, but the plant itself is inherently kosher. Processed food on the other hands, even if vegan, isn't automatically kosher. But 100% spices, for the most part (there are some exceptions), are kosher even without a certification.
Meorah never said vegan food is always kosher. She was talking about recipes. If you want to make kosher kimchi, following a vegan recipe is convenient.

Thanks! It’s probably the store “East & West” in the shuk. We have stores like that in Jerusalem too, and thank goodness they do have kosher gochujang (fermented chili paste) which is a key ingredient in Korean cuisine. 😊
Wow, I also use this paste, it's excellent, I like its taste very much, I prepare almost everything with it, especially fish, so I prepare Moroccan fish with a Koranic flavor 하하하하하 💙🤍🇮🇱🇰🇷🕊🌸🩷🍯🍯🍯

Gochugaru has its own flavor profile, as does each type of pepper. At least in the United States the most common ground red pepper is not the same.
U should be able to find the dried whole red pepper in a spice store just ask for פלפל חריף שלם יבש ❤️ thx for the recipe 🙏🏽🙏🏽🙏🏽

You know that if you add some bay leaves to the mix it will keep everything crunchy instead of mushy.
