Just FYI: Some households don't use the muslin cloth when making idlis. Instead, they add a drop of cooking oil in each of the idli "holes" to coat them slightly, and then pour the batter... it has a similar effect of allowing easy removal of the steamed idliis.
But they stick to the plate get dried up when it is cooked without muslin cloth I know this because it is one of the breakfast food I eat everyday since being south Indian (Tamil Nadu). But I don't know about it with muslin cloth cooked.

Glad you're seeing Indian dishes other than Chicken Tikka masala and naan. India has a ton of awesome dishes but unfortunately, the world seems to just get to know about a handful of the North Indian dishes that have spread. Honestly, it almost feels offensive to foodies like me. :D This chef looks legit and I'm 100% sure his food tastes awesome. I would really recommend Kristen to go there and try those dishes out.

while watching this I am making a curry using tender jack fruit, its fried coconut with masalasa(bledded without water and make sure oil came out while blending).. its a long process
Adding Gun powder or the lentils powder (with small amount of Red Chilly ) is of recent practice. Dosa like Idli has to be a stand alone item. Gun powder is not mandatory or even desirable, it won't bring out the original taste of Dosa. This Chef is an expert and kind hearted gentleman who knows his job well. I am a fan of him.

If even a professional chef has to check the idli before taking it out, then my mom must be at a god level because she doesn't have to check if it's cooked, she knows when it's done.

We working mums wake up every morning, cook food and serve it to our family (fresh and hot) and we do the same for dinner ! We are used to cooking healthy home meals and we pass it on to our next generation irrespective of the gender ! South Indian has lot of varieties. I make 6-8 types of dosas . Not every Indian cuisine is curries/tikkas/nans. And being a South Indian-vegetarian we can cook 10-20 different kinds of meals every week. Including the sides which is also home made. Not really. You are a vegetarian and your world revolves around vegetarian stuff. You will not even eat in peoples home where meat is made nor will you ever step into a restaurant which serves meat. Idly, dosa etc are like Roti and rice. Vegetarians eat it with vegetables and meat eaters eat it with meat dishes apart from vegetables.
I prefer dosa with some thicker batter. I could well as eat chips with chutneys instead of dosa, if they have to be that thin and crispy. Idsli is really tasty with some good sambar and coconut chutney. I add red chili powder mix on top of idlis to make it spicier. Not a big fan of stringhoppers, but I know how much moms struggle making it. Uttappam and paniyaaram is not something I have tried, but it looks quite tasty.
It would taste much better if the batter was made using stone grinder, here the mixer cuts the items & makes the batter. But in the stone grinder it crushes the items & once you taste the idli/dosa batter made by the stone grinder you will not like the others. In early it was done manually & all other spice pastes were also hand grinded using stones in hindi its lori in malayalam its ammikalle.
Mysore and Bangalore is the capital of Masal Dosas. Though these dosa look good, it's not authentic. Masala in masala dosa is not the potato, the masala is a type of red chutney spread on the dosa. The red chutney is a blend of Red chillies, garlic and Jeera.
Guys can please take a look at the movie Kammattipadam(2016). It stars Dulquer Salman and Vinayakan(The villain from Jailer). Its easily one of the best movies from Malayalam industry. The movie has great acting and a powerful and dark storyline. Vinayakan received various awards for his performance in the movie including the Kerala state film award. Try not to miss this gem!

I was in South India for my college. Those 4 years, I had the best breakfasts in my life. Rotating between dosas, idli, vada.
