  • You read that right and this ain't no click bait either! I wanted to save as much as time as possible in my Brew Day and in fermentation, so I took every shortcut I could to make (what could be) a record breaking IPA!

    Shortcuts:
    1. Smaller 2.5 gallon batch
    2. eBIAB for mash control - separate kettle, propane burner for boil
    3. 30 min mash 30 min boil
    4. JaDeD Scylla with pre chiller ice bath
    5. Lutra Kveik for fast fermentation at high temps
    6. Carbonating lid to save carb time

    Fascinating results! Kveik is a beast. And glad you got to do some short mash and boiling, that’s the only way I brew these days

      Have tried short mash with corn sugar to bump up ABV ??? looking for tips to hit my wheeel house (8-9%)

      @@tman9338 that would work just keep in mind youll want to something to help balance the flavor. I wouldnt solely rely on corn sugar for ABV, consider DME if you want more substance to it

    I've so far never tried to push how quickly I can turn around a beer but it could be fun to try at some point!
    Doing a high temp kveik Pilsner I've done 2 weeks, 1 week primary 1 week bottle conditioning with great results and pretty good clarity. Having a kegging setup and the diffusion stone definitely feels like the biggest speed cheat code for ferment to drink fast.

      It helps so much! Temp control (Kveik is the exception) and kegging I think saves the most time.

    I made a Voss RIS last year about this time. I dunno about "grain to glass" but fermentation was 3 days at 90f. 1.120 to 1.025. I bottled these to age them and, guess what, they taste exactly like an RIS. I put half the bottles under heat and conditioned those in 3 days as well. No, kveiks don't always [produce spectacular beers when fermented fast. but they can if you know how to handle the yeast. Various kveiks are now my "US-05" and 34/70. Virtually all my beers, ales and lagers, are grain to glass in 7 days (including 2 or 3 day cold crash - even with dry hops). Brew one weekend, keg the next.

      I love these strains for how flexible they can be. You're exactly right that they don't always produce the perfect beer but I never expect that so I haven't been disappointed yet!

      It should add a touch of bready-ness which will up the complexity. I will definitely be doing that for my IPAs that have a simple grain bill.

      Give it a shot but if you can let it sit in the fermenter for a few days to let it clean up, I didn't have time to do this and I wish I did

    If you ever do anything like this again I suggest using 100% DME and 0-5 min boil for even faster brew day. I do this and use hexa or tetra for bittering, cryo hops with some additional hop hoil extracts (hop shots and burst) from totally natural solutions (TNS) for some complexity at yeast pitch and in the finished beer (as dh). Using this method I can shave off a couple of hours of your total time to about an even 24 hours.

      SHEEEEESH! I strongly considered DME but I don't have any on hand anymore and this brew day was as impromptu as they come so I opted out of a trip to the Homebrew store and opted into the grains I had on hand 👍🏾

    I've done a few in something like 4 days but the problem is the beer still needed to condition in keg for a week or two to get to its peak flavor.

    I have done about 25 brews since I started home brewing and I have had three of them with diacetyl. So I would be a little hesitant to push it too fast. I try to do a full two weeks and making sure to give a diacetyl rest toward the end by raising the temp a few degrees.

      This was very experimental and yeah you would wanna let the yeast clean itself up if possible, not a tactic I would do regularly. A yeast like this doesn't generate much diacetyl (in my experience) so you may not need to worry about it too often, definitely a great practice though!

    Did a 3 day SMASH beer and it was very grainy at first.... 2 weeks later it tastes a lot better
