I didn’t think I could give up bread, pasta, pizza, sweets, biscuits, and gravy, beer and wine. It’s amazing what you think you can’t live without. Thanks for another great broadcast.
I can not count the times people tell me that Keto is bad and will kill me. You need vegetables or you will not survive... That is why I rarely thought about doing Keto. But then I had weight loss surgery and I could not eat and this "noise", the constant craving of food was gone. And I noticed it. I had no idea that it was there or how strong it was. It was bliss. Then after 6 month or so it came back. I did notice. I asked myself why and now that I could feel it, I could figure out what causes it and it was carbs. If I had one bagel, a few hours later I was ravenous and hungry for more and it would not go away for 24 hours. That put me on the path to not have carbs. And it morphed from intermittent fasting to Keto. I am doing this for 3 years (??) now and I miss nothing. I bake my own Keto (Lupin Flour) bread, have eggs and meat and some low carb vegetables and am happy. Bloodwork is fine even the cholesterol. I decided to break it a few weeks ago for a breakfast place on vacation that had these french fried potato spuds I used to love. So I had a normal Ruben with bread and a pile of those fries. I ate maybe 1/3. Stopped. Had the sandwich and realized that I don't care. I did not need to have this. I don't crave any sugar in anything. It is actually icky to me.
Yes! I finally figured that out too. Carbs make you crave sugar! After eating pizza, what do you want, something sweet (or spaghetti, Chinese). Keto is the answer for me. I love how I feel and look! No going back.
I've had a few comments on "the lack of vegetables". Appearently, a lot see keto as a mostly carnivorous diet. I don't believe in "eat the rainbow", but colors are definately not absent from my diet. I probably eat just as many vegetables as pre keto, they are just different parts now. Gone are most of underground veggies, onions excluded. Vegetables that I once saw as pro flatulence (toxic as in WMD), I now eat a lot of, without any issues. However, a day with bread or pasta, and were back to WMD status. I eat egg, onion, kale, brussel sprouts with zero issues. Things that most people is synonymous with toxic fumes. Not the case here. Pre keto, I was an avid sourdough enthusiast. I loved baking, spent hours upon hours perfecting my technique and no loaf went to waste. It showed. I still love the smell of toasted bread (the smell of the maillard effect on glucose), but life is better without.
I really didn't know anything about keto until Akins, I bought his book and started down that path. It seemed to restrictive and being a person who loved Blueberries, I just didn't want to continue. A little over 5 years ago I went in for my annual. I was a train wreak. One day after that appointment I just made the decision to start keto with a basic understanding of it. 3 months into it, I was down over 60 lbs. I went on for a follow up appointment and they could not believe the change. All my doc said was to keep doing whatever you're doing. I have not looked back. The first book I read on the subject was "The Big Fat Surprise" by Nina Teicholz. Having spent over 20 years in the medical field, this book was eye opening and shocking. If you are really interested in how we got here, this is the book. During my career, I was spouting the same things as described in Dr Berry's book.
Bread. I loved a sandwich, be it a complex one right down to a cream cheese and onion or chip(crisp) sandwich. Just the fact that subway bread had to be classified as cake in Ireland tells you everything you needed to know really about how healthy it is.
Bread for me too, took months for me to finally chuck so called keto bread in the bin. Then I had to carefully plan meals to cut out the easy, lazy sandwich eating. I us😂ed to tell myself that avocado or peanut butter on toast was ok because of the fat involved, but in fact all bread is a nono. Better to eat a proper keto diet.
3:01 Both great books. Interested to see how you compare/contrast them. Another great book is, "Why We Get Sick" by Dr. Ben Bikman. 7:43 "Lies, damn lies, and statistics: - Mark Twain. 9:42 There is a spurious correlation between the increase in margarine consumption and the increase in divorce rates. Ergo, if you want to stay married, don't consume margarine. 🤔 16:50 In the immortal words of Homer Simpson, "Ah, beer." 🍺
I love animals of all kinds, so I was an ethical vegetarian for almost 30 years. It was a hard move for me to go keto and begin eating meat again. But as a veg my weight had climbed to 366 pounds on a 5'9" female frame. Yeah, out of breath, no energy, etc. I finally realized I ##had## to make a change.
@@dylnjac All you can do is buy the most ethically sourced meat you can afford to make this diet as humane as possible. Get to know farmers and butchers who will be transparent about their sources. Good luck and good health to your daughter.
@@felinesofine this is the solution I have come up with too. I buy local, grass-fed, humanely-raised meat and poultry and eggs from pastured hens. I still don’t feel great about it though, being a lover of animals. But I don’t do well on a carb diet.
I agree about statistics. I took a class while I was working on my masters degree. The main takeaway was that you can make them say practically anything you want. I've been skeptical ever since.
If you know how to use statistics well enough, you can get them to prove anything. Suspect phrases to look out for are “after we removed the outliers” or “once we normalized the data”. 😉
I started keto in 2012 after Phinney and Volek's book came out. I was a member of an old-fashioned chat board group and we shared information and food ideas with following closely our macros. I just mostly eat low carb now, and don't worry about counting anything. Thanks for this video!
@ I’m doing carnivore but planning on transitioning to low carb after January. All I’m interested in eating though is a bun on a quadruple cheeseburger or a burrito tortilla full of taco meat. I wonder how much it would affect my weightloss
Hardest steering me away from Keto WAS breads and Pastas. But now there are recipe videos and more store shelf items. And it's no longer issue for me. Thank you for helping us navigate through this. Your Glucose testing of products helped me greatly.
Killer bees! Yes, to this day, I remember how frightened I was! lol. We were just sitting ducks here in Indiana! I really appreciate you discussing the topic of research today. I used to have a prof that carried around a mug that read, "The plural of 'anecdote' is not 'data.'"
The first time that I did keto in the early 2000’s I did it to prove that I could not give up bread. I was a trucker at the time and over half my meals were sandwiches or pizza. 😂😂 I was proved wrong and I went 4 years without carbs.
That's great. When my daughter found I had gone low carb (and lost a lot of weight without trying; she is overweight/obese like I used to be) the first thing she said was oh I couldn't live without bread. There are a lot of things I didn't think I could manage not to eat but I've been low carb since Oct 2021. I'd rather go without something than get the craving for it and not be able to stop.
I think the biggest thing that prevented me from doing keto sooner was 1) I was not really aware of it way back and 2) I was in denial about my weight gain since high school until my A1C elevated to pre-diabetic level. I smoked for 20 years or so but I pretty consistently worked out over the years by swimming and running mostly. I did not think it was possible to cut out carbs that I was so accustomed to preparing for every meal and I was genuinely surprised when I got over the initial “keto flu” at how easy it is and intermittent fasting as well. My epiphany was when I realized that I was eating 6 meals a day ( that I thought were all healthy!) At this point I am a bit pissed off by the medical and dental professions for not realizing and educating the ill effects that carbohydrates have on general health and dental health in particular. The whole “eat less, move more” argument that places the blame on patients is infuriating as well as the dentists mantra that you need to brush and floss your teeth in order to prevent decay. I mean if you read Weston Price’s “Nutrition and Physical Degeneration “ you cannot deny the effects of the modern diet on dental and oral health. This tendency for both professions to implicitly or subtly blame the patients for these chronic diseases and conditions is truly astounding.
@ I agree, I have been following both for about 4 years now. I also consulted with Dr Eric Westman at Duke when I was having difficulty with my GP here in Charlotte. I have been holding off but may have to fire him and get a doctor who understands low carb/ keto going forward.
Easy, I first learned about the ketogenic lifestyle on July 18, 2018 when my doctor congratulated me on being prediabetic, hypertensive and morbidly obese. He gave me 2 options. First was pharmaceutical. The other he and his wife had been experimenting with was a keto diet. He gave me those options, briefly explained how a keto diet worked and as I left the doctors office, called the wife and explained to her how we were both on the ketogenic diet. 😂 I went hard-core the first year and lost over 100lbs fat. As far as I'm concerned, this lifestyle saved my life twice! Once from a supposedly family cycle of T2D and heart disease and the 2nd time was when Covid hit. I was so big in 2018, I probably would have been hospitalized in 2020-22 at some point if I hadn't changed....... despite me getting an 8" blood clot in my left leg after the 2nd "safe and effective" shot.....😏
@BetterHealthBetterMan Wow! Thanks for sharing! Glad the timing worked out perfectly for you. Unfortunately, the combination of obesity and kovid took many people, it seems.
In the 70s, my mother and I went to a bariatric specialist and was put on the Atkins diet. Over the year we lost about 100 lbs. each. I left home to go to graduate school and stopped doing Atkins. All my friends were eating pizzas and going out for burgers, etc. After graduate school, I started working and once again all my friends were eating the SAD diet. I kept gaining weight for years. In 2019, I was at the point of where I couldn't walk, my blood pressure was way high, I was 350+ pounds and knew if I didn't do something I would be dead. My cousin told me about keto. 6 years later I have kept off 140 pounds lost, my blood pressure is back to normal and only my LDL is high in my blood work. This is now the way I live.
I agree with you giving up the items was the first big hangup, my second hang up was the family. The wife wasn't sure she wanted to do it and we had just had an a bunch of little kids so they were not going to eat keto and it made it tough to want to get started on that path alone. Really with the help of your channel my wife was much more interested and joined me on my keto journey and that is really made in much more duable To Do.
Over the. years I tried pescatarian, vegetarian, and vegan all of which seemed to help initially, however, in the end, each one slowly started to make me feel worse. I eventually gave up and returned to eating whatever (standard American diet). That also left me feeling low energy, brain fog, etc. When searching for a new diet plan, the only one left was keto. I was hesitant to start keto primarily because of the negative picture surrounding keto in the media and medical community. The high levels of fat in comparison to carbs seemed so counter-intuitive to everything I knew about food nutrition. (not much) My rationale for going keto was, what have I got to lose. None of the other supposedly healthy diet plans had worked. I began feeling better almost immediately. I started with bulletproof coffee, skipping breakfast, and cutting out carbs as much as possible, and adding in more animal protein. Less inflation meant less joint pain. More energy meant it was easier to be motivated to exercise. No more blood sugar crashes in the mid-afternoon that left me feeling tired and sleepy. With my body producing ketones my brain fog went away. Did I crave bread, pasta, snack food? Yes, however over time that has diminished, though not entirely even to this day. Have been low carb now for several years and don't see myself changing anytime soon. I would describe my food plan as a "real food" diet. Primarily vegetables, some fruit, animal protein, and some fermented foods. If it needs a nutrition label, it probably is not "real food". Thank you for all the wonderful content you create. Has helped on my journey to find a food plan that works for me.
Mine was ‘fear of missing out’ but I got sick & tired of not feeling well. So, thanks for a great chat, Steve & timely…new blood results show drastic increase in cholesterol, per my Dr call. Now the cardiologist wants to see me in a couple of days. He knows that 8 mos ago, I started Keto, stopped statins, A1C dropped to 5.4, got perfect routine stress test results & I’ve lost 74#. He’s been ecstatic but now he’s up in arms…I need to do some quick research to have a well-informed Dr appt. Good luck this week with your schedule! Love these chats 👍🏼
I think it depends on if you want to educate (fight with) your doctor or just trick the cholesterol test. Educate: watch videos by Dr. Ken Berry, Dr. Rob Cywes, and Dave Feldman on LDL cholesterol and hyper-responders. There's also a great chapter in "Lies I Taught in Medical School" by Dr. Robert Lufkin on how over-prescribed and ineffective statins are. There's also a lipid panel you can request that shows the LDL particle size, assuming your doctor understands that there are different types of LDL and having a high large particle LDL is perfectly alright. Trick the test: Watch videos on the "Feldman Protocol" or I did a podcast around a year ago where I talk about a handful of supplements I took for 3 weeks prior to my lipid panel and my doc was quite pleased with the results.
@ wow, thank you, Steve. Educating myself more on the factors you mention so I can stand my ground & do what I deem best for me & as I know he’ll ‘demand’ new blood panels, I’ll request the lipid panel you mentioned. Then, of course, I’ll supplement up before my next blood draw. Awesome & thank you!
Our lives were definitely so aligned. Home brewer/kegerator system. Lots of other stuff you were going through, I was too. We probably did the Atkins diet at the same time and then stopped after losing all the weight. It really helps having a keto community that you can find on UA-cam and other places. Plus, we’ve been told that all this food that we are now eating is going to kill us, we’ve been told that for so long it’s sometimes hard to overcome that. Thanks for all you do. Looking forward to the beef cheeks.
I went on keto 6 yrs ago due to being diagnosed with diabetes…..so glad to be on it now, won’t go back to the way I ate before. Reversed my diabetes, my A1C is now 4.9😊. That there is my number one reason.
Hey Steve 👋🏼😄 Another great podcast! Thank you 🙏🏼 For me the transition to keto wasn’t difficult hardly at all. I started with a 24-hr fast and just dove right in having eaten a “healthy” diet prior. My reason for starting keto so late in life was that I simply didn’t know about it and the benefits until stumbling on a natural remedy video and going from there. Although, I will say kicking the beer and sweeter drinks led me towards dry wines instead and that’s been a bit of a struggle to kick. Otherwise, my keto journey is nearing its 2nd Ketoversary in a few weeks. Yay for keto!! 😁👏🏼🙌🏼
I had a a x-ray for something and they noticed I had a fatty liver. My doctor didn't address it or care. I saw a Dr berry video on how to get rid of a fatty liver by Keto. I said to myself I can do that and that was about 6 years ago. Probably the biggest thing I miss are biscuits and jelly.
Hi Steve. Great to see you. I laughed as I remember killer bees. I am so old (80) I remember nuclear bomb drills when we had to get under our desks and duck our heads. Like that would save us but my, we did crazy things..hard to think school administration would go along with that. The 50s. My biggest block was what Dr Becky calls the three 'C's. Cookies, candy, cake. Being a gal, I think we tend to have more of a sweet tooth. But learned to make subs with almond or coconut flour and stevia. Hope soon we can get a glimpse of the 2 little grand boys. Thanks for blog. Hi to Terry. Great to see Courtney last week also. Good honest review. From Alberta, Canada. 🏒👍
Being of Ukrainian cultural heritage, the thought of giving up flour was a non-starter. I could not imagine life without pierogies. My favourite ones were filled with sauerkraut fried in bacon fat so I can satisfy my craving by using that in a Reuben chaffle.
For me it was the thought of giving up bread, snacks and having to be mindful when going out on the weekends. It’s crazy when doing keto properly, I don’t have any food cravings at all. It’s only when I do more of a dirty keto that I have issues with cravings.
Whether I've eaten a cheat meal or if reviewed a "keto" product that turns out just to be junk food with a "keto" label (which is a lot of it), I can count on feeling hunger/cravings for the next day or so. So I definitely know where you're coming from.
Hey, Steve! Great discussion! I bought into the food pyramid & "all things in moderation" lifestyle and have been pretty healthy. I put on some weight that I couldn't shed and glucose levels rose so I started learning about keto. Prior to that, I couldn't understand why someone would cut out certain groups of food. Fortunately, channels like yours helped me learn quickly and I've dropped 30-35 lbs since August. I haven't completely lost interest in sweets, but the convenience foods are now way too sweet for my taste buds. Fortunately, I've learned to eat more for dinner & there are great DIY options with shine decaf ☕️ that satisfy my evening cravings '.
Just returned from three weeks at my sister's house eating what they eat (potatoes, bread, rice, etc.) and got bloodwork done in preparation for a doctor visit. While I didn't gain any weight, my cholesterol and A1c went all to heck. Now I have to convince my doctor I'll get back to where I was without pharmaceutical intervention.
Just remember, you don't have to convince your doctor of anything. Your doctor is paid by you. I bet by just explaining what happened, your doctor will understand and not suggest pharmaceutical intervention. Even what you eat the day before blood work can influence the results according to my nutritionist.
I stopped listening to my doctors over 20 years ago.. When they told me I needed statins and blood pressure meds to prevent stuff from my newly diagnosed type 1 diabetes.. I just use them for my RXs..
yes! regret that I did not start as soon as I learned about it! Instead I listened and learned more about science of it for a year, while gaining more weight, but was too overwhelmed in not knowing how to make all the changes at once. I finally realized I did NOT need to make all changes at once, and Instead started in baby steps where I only changed one thing at a time, got used to it for a while before adding another change. Even on "part time" keto for the first year I still lost 40 lbs and got rid of T2D & low thyroid issues and a long list of other things. In year 2, I finally went full-time clean keto and lost 50 more lbs... and another 10 after that. Coming up in May will be 6 yr keto-versary and I've maintained easily. It's a happy life that I can't imagine leaving behind!
For me it was toast. Not even bread or rolls, but toast. I figured if I ate eggs in the morning, I had to eat toast. Once I eliminated it, I didn't miss it at all. Looking forward to your review of the books. Thanks again.
So many things - toast, orange juice, cereal, etc. - that we've been programmed to believe are "part of a balanced, heart healthy diet. It's hard to get past the association of toast with eggs...
Glad you are enjoying Dr. Berry's book...I did too and it's nice to hear a doctor actually tell it like it is! Enjoy your time with your grandkids and have a great rest of your week Steve! Keto on...
When I first heard about Keto, I couldn't believe it. After more than 12 years of (unsuccessfully) following Weight Watchers, I was indoctrinated into the SAD, calorie (or points) counting, fat is bad way of thinking. Then I saw a picture of my brother and SIL after their year-long Keto journey and I was shocked! They looked great - years younger than their physical age. So I said why not check this out. Obviously WW wasn't working. Started Jan 2019 and got my husband on board by April. Carbs creep into our lives now and then (traveling is hard), but our normal will always be keto. Love Serious Keto!
I had done South Beach Diet successfully in the past and regained. I kept seeing so much about vegan and whole foods so I tried that and gained a lot of weight back. Some big "fitness celebrities" did a good job of making keto sound deadly. I finally dipped my toe back in after reading the South Beach keto-friendly Diet. I'm so glad I did. I have always had a sweet tooth. The way I have been able to stay the course is knowing there is a keto recipe for almost anything I thought I would miss.
I found Dr berg/keto 10 years ago while dealing with breast cancer at 42. Jumped in. Was great for a couple years then struggled off and on. On carnivore now. Love it.
I’m having a hard time with maintenance. I hit my goal weight and watched Thomas DeLauer video where he said you should work in carbs to remind your body how to metabolise them. Now I’m gaining a little and having a hard time going full keto again. It’s doubly hard now because my husband is home all the time now. He was an over-the-road trucker and retired. Now cooking for him every day, he wants carbs for meals a lot and it’s tempting me. I need to see maintenance videos and also how to keep on keto with non keto families.
I don't see anything wrong with adding some healthy carbs in from time to time (or even having a periodic cheat meal), but I don't think there's any science to support that your body forgets how to metabolize carbs.
end your carb confusion by dr eric westman helped me transition from keto to a low carb diet… i throttle between keto and low carb and am doing better all around we are all different its good to pursue other ideas …but i will never forget how IF , OMAD and keto cured my sugar/carb addiction so I still respect it as an amazing healing way to get our metabolism back under control(and blood sugar :)
(Way) back in the late '70s WW was the only way=starvation. Then Atkins came along but as you said, so few options to "Help". Like you, eating carbs is fun for a few weeks (Holidays) but a relief to have the joint pain gone.
I’ve struggled with keto for over a decade and could not see any results. I tried several variations: carnivore. Carnivore + Fresh fruit. Keto with dairy. Keto without dairy. Restricting calories. Eating more fat. Measuring ketones. Cutting protein. Nothing worked. Finally, I went to a doctor. Saw my testosterone was near zero. Got me on LH and FSH medication and now my appetite is finally normal and this ketogenic way of eating is FINALLY working!!! I am finally eating way less and my mental health is 1000% better than before. Sometimes it helps to get your blood work done if you’ve tried everything. This is the happiest I’ve been in my adult life and I will have six pack Abs this year. 😎
Good morning. Another good podcast. I use to eat cabez tacos, they were awesome. My doctor awhile back told me to eat Atkinson bars to loose weight. Didn’t work for me. Dr. Fung’s book got me started on keto. Thank you. Have a great week.
Fear. I tried Atkins in the late 80s and felt great, but my doctor scared me into going back to low fat, more exercise, low calorie, and starvation misery. If I had been supported, I would have been thinner and healthier years ago. 😔
Hi Steve-when I first heard about adkins I was still a clinical RN and was afraid of the health consequences for eating that way. By the time I heard about keto, I too was not wanting to give up crunchy carbs and white rice. We always had a container of white rice in the fridge. Now I am almost completely carnivore and if I cannot get my daily dose of bacon I feel like I will go into withdrawls. Excellent explanation of the studies, particurarly the 7 country study.
I too tried Adkins and I fully didn’t understand it but I lost weight. I quit because I was bored with the same foods which was eggs and bacon for breakfast and chicken for dinner. Who knew all the variety of recipes and knowledge that goes with Keto/Ketovore!!! What a difference 🎉❤😊
The hardest thing for me to give up was pasta and beer. While I have given up pasta I still do have an occasional beer. Hopefully someday I will completely give that up too. Great podcast Steve!
I was/am a carbaholic. I had grown up during the low fat era and had switched from old normal (meat & 2 or 3 veg) during my teens and early 20’s to cheese for brekkie, sandwich for lunch and pasta/rice with sauce or sweet curry, cheese and potato croquettes with spinach and ratatouille, sausage, potatoes & onions, baked or boil in bag fish with potatoes etc etc for dinner. I couldn’t imagine giving up bread (what would I do for lunch at work???), pasta or rice or potatoes, my meat/fish intake was lowered because my main meals were carb heavy. I didn’t physically eat much but it was all carby. I had to learn to eat meat properly before I could move to Keto!
Bread was my big obstacle. And I’ve tried a ton of the keto breads - and for the most part Ive learned to do without! I do love the Hero cheese biscuits and croissants though.
I had a hard time giving up breads and pasta. Then I found out that I was allergic to grains, so I was sort of forced into the keto lifestyle. I say it’s a blessing in disguise now.
I gave up bread and pasta and rice and regular ice cream in 2019 and now four years on carnivore and I don't eat veggies or fruit or sweets and I don't crave them. That's what they do to me when I eat them. I am much better eating carnivore. Course lately all I could afford was eggs. Hopefully if I get the new job that will change. Wonderful video as always Steve.
I can definitely relate to the remodel interuption...starting on the 20th of this month, my bathroom is being completely redone (long overdue, house was built in 1954). I have notified my boss that I will be out for at least a week and while excited to see the finished product, I am not looking forward to the process.
I like the idea of just posting your meal because we are all not always perfect. Plus I have heard beef checks are fantastic. I have never seen them in a store. Unfortunately I feel I can no longer trust anything in the media. Being a nurse I read (or at least skim) entire papers and I see stuff all the time...skewing data to fit the desired results. I am also losing my taste for fruit/veg and I was a huge salad girl now not so much...like once a month or so. It was the processed carbs that keep me from being Keto...loved my bread/pasta. You can give up anything if you truly want to if you truly want to.
I think the cancer risk re: carpentry and other trades is often lung cancer related to inhalation; true for my husband who is a stone mason and dealing with silicosis from dust inhalation.
I, too, had done Adkins! I lost 60 or 70 lbs.. then the holidays came, and I went off as well. When I tried to start back after the holidays, I got keto flu... and not knowing that's what it was, I thought, "I can't do keto... it makes me feel horrible! " The excuses were a plenty, like you. "I can't give up... bread." Now that I have given it up I don't miss it. Like you say it's just a conveyance device.
@SeriousKeto right! I don't know what happened the first time, it was great didn't have any issues.. after the holidays was a different story, the first 3 days were AWFUL! A friend had done keto for a company weight loss challenge and did so well! When I was asking her about it, she basically described Adkins. I immediately dismissed it! Nope! That made me feel like poo! Can't do it! It was a very memorable feeling! Made a lasting impression for sure!
Beef cheeks are incredible. When I make them, I end up with a great flavourful sauce and very tender meat. It takes a while but it's worth it. I take some of the sauce and cook shirataki noodles (0 carbs) in it. Make sure you rinse the noodles prior to using them. Enjoy your dinner
Enjoy the grandkids, and best of luck with the painting, and cooking! I tried beef cheeks a couple years ago, but I must've done something very wrong. They were braised, but tough as boots! 🤦🏻♀️ I am ashamed that I didn't go into a ketogenic way of eating, back when my Mom was trying curb sugar. I had watched her go through so many yo-yo diets, I just didn't support her. (She also had massive carb addiction issues, but no one knew what that was 30-some years ago.) Now, her memory is part of the "why" I maintain this eating lifestyle. The thing that made me hesitate about changing from SAD was years of watching *her* diet struggles, and being a hardcore foodie. Now, I'm a "recovering foodie"! 😂🎉
🤣🤣🤣🤣🤣🤣🤣🤣🤣🤣🤣🤣 I surely do remember Killer Bees, more so because I'm allergic to the sting. Ahhhh, the 70s. I so remember....Great Podcast looking forward to the Beef Cheeks recipe I so want to make that....Hope you show Calvin would love to see the both of them together....Julianna NC
Bread and potatoes were my downfall. Although I do make my own keto-ish bread, on occasion, I'm ashamed to admit I do eat commercially prepared keto bread and tortillas. When people tell me that keto/low carb will kill me, I ask when. I've lived this lifestyle for the better part of 35 yrs and at 68, I'm doing pretty well
I thought I was good enough until I took Terbinafine (orally) to fight toenail fungus. The doctor wanted to do a 12-week course and do blood tests at the start, halfway through, and at the end to make sure my liver wasn't getting beat up by the medication. All three were fasting blood tests and all three had my blood sugar at over 300. On that third visit, we talked about it, she did a finger prick and measure my A1C and it was 12.7. Bam! Pre-diabetic. "Good enough" was no longer good enough. So it was time to fix things and I found out a keto diet could do that. That was almost 4 years ago and I haven't had an A1C above 5.7 since then. Also, my liver handled the terbinafine like a champ.
I love pasta and sweets! I finally came around to keto after researching multiple sources stating this is the diet for those who crave carbs and sweets. I thought I would try it. That was several years ago. I baked as many sweets as I could trying to make ones that would pass a blind taste test with "real" sweets. But now, keto is so easy. Thanks to aviate, pasta is real and choc zero has created so many goodies that taste great. The real winner is keto chow with the ninja creami. I was resistant for a while, then we bought one. Having ice cream every night, why not keto?
I remember killer bees. I was never into fruits or veggies that must unless you include wine as a fruit and a potato as a veggie. I would say potatoes and alcohol were my biggest obstacles. Thanks for sharing Steve. Have fun with your grandkids.
What kept me from going keto sooner was, I tried Atkin many years ago before social media. I hated it and wasn’t successful because there weren’t all of the helpful recipes and products that tastes great like we have these days. I absolutely hate Stevia and that was basically the best sweetener that we had. Because of that, I didn’t last long on keto. Fast forward to last year, I was trying to decide what I was going to do to lose weight because I had developed hypertension. Through my researching, I decided that keto may be the healthiest and fastest way, and the thought that it can calm my potato chips cravings was a plus. 😂. Today, I can’t see myself NOT being on keto in some form because I FEEL so much better and I sleep so much better.
Alas, although I have been low carb for 3 years, I still crave sweets and vegetables. I try to stick to broccoli and cauliflower, but I still occasionally go for lettuce and cabbage. It’s still a struggle, but the loss of 75 pounds has made it worth it. It was either that or weight loss surgery. Thanks for the conversation and good luck with the repaint.
Killer bees. Yes. They haunted my early childhood, except I knew that bees could not like the Midwest winters. Regardless I lay awake at nights formulating a plan to survive.
I had done the HCG diet and it worked great and I felt great but..... IT IS NOT SUSTAINABLE! Of course being a skeptic at that point I studied the keto diet for quite a while and then just went all in. I will never go back since it is so easy to continue doing. No calorie counting and never hungry.
The HCG diet gets great results, and it was part of my diet rollercoaster of the last 30 years. But I agree that it is not sustainable. I was pretty miserable eating every meal.
Everyone can take the same data and get what they want from it. Keto? When I started 6 years ago I didn’t know about it. When I found out about it I fell in love with it. I thought it would be hard was not having beer and potatoes and bread. I loved veggies but now in Keto I love them even more.
The more you know about statistics, the more you realize how easy it is to manipulated data. There are lots of red flags to look for: misuse of means vs medians, "normalizing" the data, filtering out the "outliers", etc.
Enjoy time with the grandkids! I know you will love that. The hardest things for me to give up were potato chips and pizza. I do miss having potato chips.
I've been on Keto for 8 years now. I started because I had always been thinking but gained a lot of weight. Well, after 10 years of going to so many doctors my gynecologist told I was insulin resistant. Before I left his office he did tell me "no more carbs". I really didn't know much about Keto but I leaned. I was raised on Guam and rice was my everyday food. I don't really miss it. I have it about twice a year...maybe.
There are essential fatty acids and essential amino acids (neither of which our bodies can make), which is why we need to consume both fat and protein exogenously. In the absence of exogenous carbohydrates, our liver will produce whatever glucose is necessary via gluconeogenesis. So yeah, I agree with your DC.
1. I intentionally do math long hand since I don't like Soduko (then recheck with calculator 😏) 2. Going down the rabbit hole but staying on topic was a fun part of the video 3. Did you get the beef tallow from your cow? 4. I had to change my environment to kick the habit of smoking and then pride was the kick start for keto (tired of being the fat caregiver)
I got all of the suet for my daughter, Courtney, to make tallow (she makes homemade lotion and soap). I have plenty of tallow that I've already rendered. I also got the marrow bones (both for roasted marrow and then to make beef stock).
What kept me from keto is I’d never heard of it until almost 6 years ago. I noticed a man in my church had lost weight & I asked him how he lost it. He said ‘Keto. Don’t ask me about it, it’s too complicated to explain it. Just look it up.". So I did. I thought “I think I can do this.". I really enjoy keto, but if they could ever find or come up with a keto-field version of popcorn that tasted & crunched similarly, I would love i! That & diet cola were my go to every night before bed. (Popcorn raises my blood sugar 70 or more points, as a type 2 diabetic).
Been Keto many years now. Still brewing and drinking beer. BUT ... needed to reduce amount and frequency. Been keto so long now I can go to an IPA tasting and not get knocked out of ketosis. I also use yeast strains that will convert more of the sugars in the wort.
Those were the days! How did we survive without cell phones? We left the house and our parents had no idea what was happening or where we were for the most part. 😊 Those were the days!
And just think of all the microplastics we must have poisoned ourselves with drinking from garden hoses and Tupperware glasses. Yet we’re still all here. 😉
Beef cheeks are my absolute favorite thing to make. Once you eat them no other cut of meat will ever compare . I get mine at Sam’s but you have to trim them yourself and half the bag is fat and tendon. Wish I could find them from a local butcher instead
Insulin was why I took too long. As long as my insurance paid for it then I ate whatever I wanted. When my insurance company decided I had enough for the year I had to do something drastic and keto was the only option.
The pervasive message of moderation that is physiologically impossible for a carb addict developing into a type 2 diabetic. Once I did better with OMAD on the SAD, I then acknowledged the fallacy of that message - I then truly researched other eating styles.
My doc told me to read the meta study done about cholesterol and why he wants me to take statins...which Dr Berry also said not to use as proof of the reason to take statins.
16:49 "Beer is proof that God loves us and wants us to be happy." Benjamin Franklin Who doesn't love beer. That's not a question! My DC says that "...one good, dark German beer a day would do a body good, but who can stop at just one!? One more reason to give up beer, besides the alcohol, estrogen. Beer has plenty of estrogen, I think it comes from the hops. Anyway men, in today's day and age we don't need any more sources of estrogen in our diet. We don't need the beer gut or the man boobies. That said, beer is my "not-so-secret" secret ingredient in my venison jerky marinade. Also, I think I'm speaking for 99% of us when I say we appreciate Steve's easy-going approach to Keto, his non zealot style. Love it actually!
I did not know about Keto. I was always doing low fat, low calorie diets and they always failed. I try not to think of Keto as a diet, but as a lifestyle change and that clicks for me. Do I stray sometimes, yes. But I always come back because I know it works: lower blood sugar, less joint pain (60 with arthritis), and my clothes fit better.
Ketogenic Woman used beef cheeks and said they had to be cooked long because of how much connective tissue they had. Hope your dish goes well. I think she used them for broth.
It wasn't one particular food. It was the persistent idea that if I just did the things I did when I was younger and single and in the Army -- PT every day, eat generally healthy during the week, and enjoy the weekend -- it would all be ok. I got married and left the Army at age 38 for a job in corporate America (lots of travel and meals on the road), had our first child at 40, second at 44. Back to school for master's and doctorate degrees, more work... I was lucky to squeeze in one or two (very measly) workouts a week and I ate like a foraging bear. But kept telling myself, "next week I am going back to daily PT and "generally healthy" eating during the week." I was 49 and over 300 lbs. when I finally decided to do something different and started keto and just daily walks. Two and a half years later I was back down to the weight I was when I left the Army, just over 200 lbs. Since then I also added in intermittent fasting and occasional extended water fasts that have helped a lot. Every year I go off keto for Thanksgiving and the Christmas holidays, which always makes the new year suck because I have a bunch of weight to lose again. But, I know how to do it, I guess. :)
Great video and think I am going to read the Dr. Ken Berry book! Already read Lies I Taught in Medical school and found it very informative. Another great book (aside from atrocious title) is The Overfat Pandemic. Happy 2025!
Steve! How strict of a ketovore are you? When my A1c started ticking up, I stuck to a fairly struck keto diet, for about 2 years. As my wife does Intermittent Fasting, I’m also doing it (18 hour window). But, as a guy with a slight build (5’9” 142lbs), I don’t need to lose any more weight, so I’ve backed off and now consider myself “keto-ish”. I avoid the biggies (sugar, pasta, rice, potatoes, processed foods and bread), but don’t shy away from fruits, vegetables (I’ll eat all of the broccoli you can fit on my plate) and my wife makes me a loaf of low carb bread, that I stretch out for a couple of weeks. Looking forward to your upcoming book reviews. I’ve read Dr. Berry’s book, so decided to not read Dr. Lufkin’s. Thanks for all your interesting videos!
I don’t feel like I’m especially strict. I mostly eat what I want, but what I want is mostly animal protein and dairy. I’ll go “off plan” for a meal here or there, or while on vacation, but I probably only measure myself out of ketosis once or twice per year.
@@km-bo3zx You just named the two "deserts"' I eat (though probably only once or twice per week): cottage cheese with some nut butter mixed in or full fat Greek yogurt with a small handful of blueberries.
Convenient foods is my hurdle. I cannot eart ground meat, meat sticks etc. This is a mental block I can't get past since i was a kid. The texture the smell just makes me gag. Since all the Convenient keto friendly foods are usually ground meat based, the time and energy to buy and prepare keto foods was what was stopping me.
I am a type one diabetic.. i dont have to eat low carb but I do choose to..i feel so much better and i was eating this way before i was diagnosed. So my insulin doses are quite low
As a non-diabetic, your choices are: 1) Go through a program like Levels Health (I link to them in the description of any video where I do glucose testing) and they will give you a prescription for CGMs. I think their default now is the Dexcom G7. This will also get you their VERY ROBUST app. 2) Purchase an over the counter CGM by Abbott or Dexcom. I have no experience with these. I'd recommend checking out the channel Type One Talks. He does extensive reviews on CGMs, alternate placement sites, etc. Very comprehensive channel.
Yes, carbs are addictive!!!
@@roncenti Nice!
I didn't know that about Subway bread, but it makes sense.
I love the Carbonaut bread! Makes amazing grilled cheese sandwiches.
I've heard that is a good book as well.
My daughter's been a vegetarian for about 10 years and really needs to hear this. I have suggested she go pescatarian but she's not hearing it
@@dylnjac All you can do is buy the most ethically sourced meat you can afford to make this diet as humane as possible.
It's a good when it becomes a "lifestyle" rather than a "diet". The only counting I do is when I look at the back of a package at the grocery store. 😉
@@anon-5321 so basically you can do burgers with buns so long as it’s one bun? Or one burrito shell loaded with meat?
@@Thick_Vanilla95 I don't eat bread. I just eat very low carb or keto without counting macros.
@ I’m doing carnivore but planning on transitioning to low carb after January. All I’m interested in eating though is a bun on a quadruple cheeseburger or a burrito tortilla full of taco meat. I wonder how much it would affect my weightloss
@@Thick_Vanilla95 worth a try!
Both Dr Berry and Lufkin do a great job dismantling the “calories in, calories out” lie in their respective books.
I went hard-core the first year and lost over 100lbs fat.
I went keto pretty much as soon as I heard about it from a friend.
PS, I love your digressions!
Outstanding 👍🏻
I agree with you giving up the items was the first big hangup, my second hang up was the family. The wife wasn't sure she wanted to do it and we had just had an a bunch of little kids so they were not going to eat keto and it made it tough to want to get started on that path alone. Really with the help of your channel my wife was much more interested and joined me on my keto journey and that is really made in much more duable To Do.
Family can present a big hurdle. It's great that your wife is getting on board. I wish mine would.
Over the. years I tried pescatarian, vegetarian, and vegan all of which seemed to help initially, however, in the end, each one slowly started to make me feel worse.
I've ridden the same roller coaster. Finally feeling good is life-changing.
@@SeriousKeto Also worth watching is Nick Norwitz's oreo cookie experiment UA-cam video. :-)
@@SeriousKeto Hey Steve can you attach a link to that video of the supplements you took for your lipid test?

Well done!
Hey Steve 👋🏼😄 Another great podcast! Thank you 🙏🏼
For me the transition to keto wasn’t difficult hardly at all.
If you are short on time, just let Colton read Keto Chow envelopes for 5 minutes or have him review anything. Pure joy.

Watching Steve from Ukraine here. And 9 month in on keto, I'm doing just fine )
Yikes!
I look forward to seeing your cooking video even if it doesn’t work out … there’s some fun in that for us viewers! Lol
yes! regret that I did not start as soon as I learned about it!
Nice! 🙂👍🏻
I agree with you that maintaining is hard. For myself trying to maintain is harder than just staying on Keto.
Get a new husband?? Lol jk..
Try a couple days water fast. To some, including me, it breaks cravings and afterward you add back little by little of foods you want in you.
(Way) back in the late '70s WW was the only way=starvation. Then Atkins came along but as you said, so few options to "Help". Like you, eating carbs is fun for a few weeks (Holidays) but a relief to have the joint pain gone.
The inflammation (or lack thereof) is a great motivator to stay keto. 😉
Excellent point on the other factors that can affect our metabolic health and keto effectiveness.
With all the lakes in MN I had to check the beaches for quicksand!
Every pile of leaves in the woods seemed like a potential hiding spot for quicksand. 😲
Good morning. Another good podcast. I use to eat cabez tacos, they were awesome. My doctor awhile back told me to eat Atkinson bars to loose weight. Didn’t work for me. Dr. Fung’s book got me started on keto. Thank you. Have a great week.
My sugar addiction...still a struggle. Sooo thankful to have found keto!!!!!!
Good luck with the painting Steve. Have a great week ahead!
Agree 100%
Love Barbacoa.... had Barbacoa burritos yesterday, delicious! Another great podcast Steve, I enjoy and appreciate your views and opinions!
You’d probably need to make a special request from a butcher.
I think the cancer risk re: carpentry and other trades is often lung cancer related to inhalation; true for my husband who is a stone mason and dealing with silicosis from dust inhalation.
I'm sure that's a factor, but I suspect that it's one of many.
Always fun to wing it while on video😂 nothing more exciting than a brand new cook and a camera rolling
Yup..i say that all the time correlation is not causation! Thanks for another great podcast
I felt like I had the keto flu the entire time on Atkins. Mowing the lawn was exhausting. At the time, I didn't know anything about electrolytes.
I made it last night was blow away at how tender it was.
@@SeriousKeto My next step is sous vide. I tried it also in a slow cooker (crock pot) and it was nice.
@@denis_catroun6167 please let me know how that works out, as well as time and temp. I did mine in a Dutch oven.
@@SeriousKeto You will be the second to know.
I just need to be sure: which end of the cow is the beef cheek cut from?
The face side. I believe the other end would be a rump roast (top) or the round (a little further down the leg)
😂
LOL 😂. I'm hoping it's the face end. Tender because they don't smile much?
I tried lots of things to loose weight. Just never could stick to it. Thanks Steve ❤🎉
Enjoy the grandkids, and best of luck with the painting, and cooking! I tried beef cheeks a couple years ago, but I must've done something very wrong. They were braised, but tough as boots! 🤦🏻♀️
I am ashamed that I didn't go into a ketogenic way of eating, back when my Mom was trying curb sugar.
Love the shirt, Steve!
Link in the video description. 😉
Bread and potatoes were my downfall. Although I do make my own keto-ish bread, on occasion, I'm ashamed to admit I do eat commercially prepared keto bread and tortillas. When people tell me that keto/low carb will kill me, I ask when. I've lived this lifestyle for the better part of 35 yrs and at 68, I'm doing pretty well
You mentioned the seed oils. I have made a conscious effort to avoid foods containing them. And yeah, I have a lot fewer inflammatory symptoms.
Thanks for another excellent video.
Outstanding. You definitely heeded the wake-up call. 👍🏻
All the people who say "keto is too restrictive" clearly haven't investigated keto in the last handful of years. 😉
Yep. Broccoli, cauliflower, leafy greens and celery (as a delivery mechanism for dips or nut butter) account for the majority of my veggies.
You just gave me flashbacks to the killer bee movie from my childhood. For me, it was bread and chocolate.
I've also heard my DC say many times, "There are No essential carbohydrates." I've asked people to disprove that, no one has.
I'm glad you're still able to enjoy your hobby. 🙂👍
Mine were moderately cleaned up. I had to use a salmon knife to remove the silver skin while not taking too much meat with it.
16:49 "Beer is proof that God loves us and wants us to be happy."
Benjamin Franklin
Who doesn't love beer.
All great reasons. 👍
Oh don't forget about quicksand in the 70's/80's. 😅
Ketogenic Woman used beef cheeks and said they had to be cooked long because of how much connective tissue they had. Hope your dish goes well.
I think she used them for broth.
Well, that’s what braising is all about. 😉
Looking forward to beefcheeks show. Have eaten them in restaurant last year, very tender and flavourful.😊
This is a crazy week for me, but I hope to get the rest of the video filmed for a Friday release.
@ I just recently added cottage cheese and will probably add (plain, organic) yogurt.
@@km-bo3zx You just named the two "deserts"' I eat (though probably only once or twice per week): cottage cheese with some nut butter mixed in or full fat Greek yogurt with a small handful of blueberries.
@@SeriousKeto I’m with you on the blueberries, but not sure how I feel about adding nut butter to cottage cheese. 🤐
@ it reminds me of peanut butter cheesecake.
We tried beef cheek meat one time. Not fans. We braised ours too. I really had high hopes.
Sorry to hear that.
That definitely makes things more difficult.
Oh my goodness! I was so scared of Killer Bees!!!
I am a type one diabetic.. i dont have to eat low carb but I do choose to..i feel so much better and i was eating this way before i was diagnosed. So my insulin doses are quite low
Sorry about your Packers. I was rooting for them. Sick of the Eagles! 🏈
That was a hard one to watch.
What is your recommendation for a continuous glucose monitor? I’m not diabetic. Thanks for the great content.
As a non-diabetic, your choices are:
1) Go through a program like Levels Health (I link to them in the description of any video where I do glucose testing) and they will give you a prescription for CGMs.
@ thanks!
