  • A tough video to make this week because I had to trawl through images of one of my least favourite people. Americans seem to love James Corden - and they also seem to love making hash browns difficult and complicated to make. But don't worry. My technique will ensure the crispiest, one ingredient hash browns - and you can eat them safe in the knowledge that, as long as Americans keep making these errors of judgement, one of the least entertaining people in human history will remain absent from England's green and pleasant land.     Never heard of James Corden, and will take your word for it that he's not worth looking up. That said, I did learn to make hashbrowns from a Cajun guy in Port Arthur Texas many decades ago.
    Exactly the same method except he cooked them in one giant patty and just flipped them over a few times until perfect. Once the first side gets a bit crispy, they hold together to flip pretty well, but of course flipping can be tricky because shredded potatoes, just like pastry and bread dough, can sense fear. He didn't have any, so it worked great. But I do, so I use a big spatula.
    BTW, Cajun folk cooking (Louisiana and parts of Texas mostly), conducted more often than not outdoors in the back yard, is bloody magnificent.

    An American here, but had to move to the northern most state, disconnected with the rest to survive, outside of jail. Will give your salt trick a try. You got a sub from me just for the commentary, BTW who's this James bloke, never herd of him, but don't own a telly ether.

    I just did this recipe, and I’ve got to say, absolutely phenomenal. My mostly anti-potato wife even liked them. the salt and drain worked great.

    Those hash browns look delicious! A wonderful and wonderfully unhealthy comfort food is a Southern American buttermilk biscuit, split and filled with a crispy hash brown patty right out of the grease. So very, very unhealthy for the body, yet so soothing for the soul.

    It’s interesting. I think I’ve only ever had hash brown patties at McDonalds. I’m more used to latkes cooked in schmalz or oil, or the whole hash brown being one giant plate. I honestly wish that hash brown patties were more common

      Depends on the recipe. I think American Hash browns are pure potato. Also if you add onion you will see the recipe call for flour and also egg to help bind it and making frying them a nightmare as the onion will cook quicker than the potatoes - unless you use a deep fat fryer lol.

    These look perfect, and yes, salting is much better than soaking. As an American, please, take Corden back. I feel that the only ones that like him are also Trump supporters.

      PS, I trained chefs and hotel management students over 30 years, trained Tom Kerridge amongst many others, worked in Hotels, restaurants, Michelin hotels and as an assessor for industry. Keep it simple, that's the way, and always use an h injection of humour where appropriate. Love it.

    I've never had hash browns fried with clarified butter. That sounds like something a pretentious celebrity chef would do. It's been a very long time since I've made hash browns, but if I did, I would probably use schmaltz, beef tallow or lard. Animal fats have a much better flavor. On the subject of animal fats, James Corden is an ass.

    As an American I take offense to being accused of "enjoying" James Corden. I never could watch his show but I would prefer to be belt-sanded than endure that talentless fake sack of sadness. If only we could have kept Craig Furgeson.

    You've clearly never actually had american diner crunchy hash browns. Yours look more like potato cakes because of you squeezing, pressing them together. Confidently incorrect.

    I absolutely approve of the delicious, crispy and for me unfortunately deadly hash browns (I might as well jump off the Transporter as eat anything with fat in it - paying for a lifetime of excess!) but what's the issue with Corden? I've always found him pretty harmless, and he's a damn good script-writer on the quiet.

    Seems like the salt and draining process does the same thing as washing/drying it's just a longer wait but less work. I'll need to try this method next time I make these!
