    Shrimp Egg Foo Young! (Tasty Gravy)
    Start out making your gravy...
    In a pot put 1 & 1/2 cups chicken broth
    1/2 tsp. pure sesame oil
    1 tbsp. soy sauce
    2 tbsp. oyster sauce
    1/2 tsp. sugar
    dash of black pepper
    Bring the gravy to a low boil then
    slowly add a cornstarch slurry.
    (that is about 1/4 cup "cold" water and equal part cornstarch)
    Once it reaches the right thickness remove
    from heat and set aside...
    Now in a wok put 2 tbsp. vegetable oil and:
    1/4 cup red and yellow mixed onions
    1 cup diced of mushrooms
    1 cup "total" of green and red diced bell pepper
    1 cup of bean sprouts (add them last)
    salt and pepper to taste...
    Cook the veggies until slightly soft and remove
    them from the wok and put them in a large bowl.
    Then add:
    1 cup of cooked shrimp cut into 1/4 inch pieces
    1 cup of frozen peas and carrots (thawed)
    8 eggs lightly beaten then mix everything together
    Spoon the mixture into a wok on medium heat with
    about 1/8 cup vegetable oil in it. Put enough in to make
    it about a 8 or 9 inch size. Cook it golden brown before
    turning. You can turn it 2 or 3 times until all the egg is done.
    Remove them to a paper towel and pat on top with more
    paper towels. Put on a plate and pour the gravy over about
    1/2 of the eggs then garnish with sliced green onions.

    I just found Mr.Steve, his mcdonalds french fry video popped up and i couldnt stop watching, i saw that he passed and it shocked me, Mrs.Sheila I am so very sorry for your loss, he seems like he was such an amazing person and somebody that people always wanted to be around, just a very genuine person, thank you for the amazing recipes, my prayers are with you and your family, what a great legacy.

    This was my Dad's favorite dinner. Never made it before but will now. Steve explains things so well it's easy to follow. He is such a hoot. Sorry for your loss Sheila. He must have kept you in stitches. What a wonderful man.

    I usually use fresh raw shrimp minced for my egg foo young, for the gravy I make a broth from the shrimp shells, I make it with the ingredients that you use to make your gravy, thank you for sharing...

    I always eat it on a bed of sticky rice and make my gravy a little thicker, Nice detailed recipe for anyone who has never made it.

      Was sorry to hear of his death. Glad to know Miss Sheila is keeping channel going! Here is a tip I would suggest less eggs but also so the eggs don’t dry out add some cornstarch so the eggs don’t dry out. Also if you kept the higher temperature and while cooking poke wholes in the eggs cooks faster and the higher temp makes the patties less greasy!

    Love egg foo young, but it is not seen in modern "upscale" Chinese restaurants. It is a really common dish in China, and eaten all times of the day. So versatile with what you can add, but fairly plain is good for me. The sauce is important.

    I tried your recipe today, didn't have any peas and carrots, so I improvised by using some green pepper, baby red, yellow and orange peppers, also didn't have any red onion, but used some yellow and green onions. Everything turned out delicious. Put over white rice (flavored with a touch of sesame oil and a touch of soy sauce). Very delicious and thank you for sharing it with us. I used leftover boiled boneless skinless chicken thighs instead of shrimp.

    Thanks so much for this wonderful spot on recipe. I had been looking for a egg foo young recipe that I could use at home. I especially needed the gravy recipe and it turned out just perfect. Miss Shotgun so much. He always took the time to explain everything so well.

    Can I tell you something Shotgun Red....? Usually you can make this in 10 to 12 minutes but Mr Shotgun Red, took his time to be very explanatory & detailed, well done sir. Not bad, actually, its a terrific recipe to really give a change of pace to usual weekly American meals. Great job Shotgun & Shiela

    Agree with limiting seame oil, great recipe. I would use the shells to make shrimp stock with bay leaf and a piece of broccoli.

    Add a tablespoon or two of flour to give it some structure, fry in a cast iron pan so you can use a ladle to pour 2 or 3 to fry at the same time.

    I like you version of this dish and I've seen a lot . I find your way to my liking because of the veges you mixed in . The others just use bean sprouts and nothing else, a number of patties floating in a sea of oil. This is healthy which pleasantly surprised me.
    ADD ON : I learned about Steve after reading the comments. I was liking him in the few minutes watching. It's weird to feel a sense of loss. I'm sorry for your loss Sheila.

    I live in Los Angeles and none of the Chinese restaurants make it like this anymore. They put the vegetables in the chicken on the top of the patties And it is not near as good but I think they do it so they can cook it up fast and easy and I don’t wanna be bothered. Since I can’t buy it here I’ll cook this myself Kathy

    Having a really hard time finding the thick rich brown gravy in Utah. Egg Foo jung gravy here is like soup with all the other ingredients not cooked into the omelette. Sad.,

    I LOVE EGG FU YOUNG.. MY Mother would make it And serve it on a Bed of Rice. Splash with a touch of Soy sauce. I'm gonna Cook me up a batch with this Recipe.
