  • PIMENTO CHEESE
    1 pound or 16 ounces shredded SHARP CHEDDAR CHEESE
    8 ounce block CREAM CHEESE, softened
    4 ounce jar diced PIMENTOS, drained
    1/2 to 3/4 cup MAYO
    1 tsp to 1 tbsp grated Onion
    Sprinkle of SMOKED PAPRIKA to taste
    fresh ground BLACK PEPPER to taste
    Place all ingredients in a bowl and mix with an electric mixer until as creamy as you like. I like mine to have lots of texture. Enjoy with pretzels, celery sticks or your favorite cracker. Make a toasted grilled pimento cheese sandwhich for a nice treat. Put it on burgers to melt for your cheese. Put inside jalapeno halves and wrap in bacon to make jalapeno poppers.

    Absolutely right! Once you make it at home you'll NEVER eat the store bought stuff again! There's only one brand that I used to get in N. Carolina that was seriously like homemade but a 12oz container cost as much as what you can make with a lb. of cheese. The only difference between your recipe and mine is I add about a ¼ c. of cheese whiz (I always get the store brand, I didn't know what else to call it though). And to keep it from getting too hard after being in the fridge. I put my mayonnaise, cream cheese, pimentos (with juice) & cheese whiz into my little 2 c. food processor and whir it together (easier for me as I'm handicapped from a stroke a few years ago & can only use one arm) then pour it over my cheese (I use 1 block extra sharp & 1 Colby jack shredded with my KitchenAid) and I use onion powder, smoked paprika & coarse ground black pepper. And if you've never tried it on a hamburger or in scrambled eggs..... that's the next thing you need to do!!! Thank you for your "show". I can't drive anymore and only work 15 hrs. a wk., my husband works out of town, so you keep me company. Take care & God bless. Rose

      I bet the cheese whiz is good in it. I still use cheese whiz in my broccoli rice casserole. Just seems nostalgic.

      So true, I have used many varieties of cheese, and sometimes I'll add green onions, and sometimes finely minced bell peppers. A small dash of cayenne pepper is so good too!

    Amy. know this is a 2 year old video. but today I did it...and you were right to post a warning before this video....OMG!!!! I saw the amount of pimento cheese you made up and I thought I'll do half the recipe cause I'm the only one in my house that likes pimento cheese....this is the BEST, THE BEST, DID I SAY THE BEST??!!??!!! pimento cheese I have EVER in my 63 years have eaten!!! no longer will I even try that over salted stuff with 3 pimentos store bought pimento cheese again!!! I had even stopped eating it because since I have cut back on my salt consumption and stopped using salt with iodine, I have real problems with food being too salty, even restaurant food can be too salty....all you get here is this creamy, cheesey other tasting thing that is PERFECT!!!....all I can say is I'm glad I have the other half of the ingredients cause I will be eating this up in probably 2 days and will want more.....I know you are with your family on the beach for vacation, but I just had to post this somewhere...so all y'all out there it is REAL the WARNING!!! IF you make this you will NEVER be able to eat store bought again.....but hey it is so easy to make who cares!!!!

    I’ve never made nor eaten pimento cheese. And I’m originally from New York. Ha ha. But I went out yesterday and bought all the ingredients and I’m gonna give it a try. It looks delicious especially the grilled cheese. Thanks again

    I like how the algorithim (sp?) works because related recipes come up. I've never tried adding cream cheese, onion or seasonings. I learned to make it with cheddar cheese, mayo, whole jar of pimentos and sugar to taste. Delicious!

    Hi Amy 😊back in the 70's the women's clubs would make these sandwiches with white bread with the crusts removed and make 🥒 cucumber sandwiches to go with them. so yummy 🎉😂❤

    Amy! You made me cry! My Momma always made homemade pimento cheese. Because of that I just can't eat the store bought! She used Velveeta in hers instead of cream cheese. I'm going try this, I'll bet it's fabulous!
    Now I'm off to dry tears and get the cream cheese out so it can warm up!

    I made this and Absolutely LOVE it!!!
    From putting it on a grilled cheese sandwich, pimento cheese and cracker AND THE BEST IS PUTTING AN OLIVE ON TOP OF THE CHEESE!!! And I find myself eating it all by itself, on celery and the list goes on.
    I did put some cayenne pepper in some and of it’s the best. And it does taste better the day after!!!

    My mom always made pimento cheese. She put Sharp cheese, a few sweet pickles and a boiled egg chopped and mayo. That is the way I was taught to make it.

I have made it a time or two but a much simpler version! 🤪 I would never have thought about putting onion in it. Your recipe sound and looks great.     Pimento cheese sandwich is one of my favorite food memories of college days. On Friday I went to the student union for the best pimento cheese sandwich I had ever tasted. They added mayo and sluced tomatoes to toasted white bread. Yum!

    I was born and raised in Texas and was raised on homemade pimento cheese. But we always used velveeta cheese. 🤮 I had stopped making it completely cause I just can't stand velveeta anymore. Honestly, it has gotten sooooo salty that it's just awful....my opinion. I found this recipe a couple of years ago and I'm hooked. Honestly I'm so close to 70 I'm shaking hands with it, and just look at all the years I missed out on good old Pimento Cheese. LOL Anyway, thank you so much for sharing!

    Mrs. Amy,
    Have you ever tried this in your sausage and cheese balls, (I think you did them around the holidays?)
    How about in your tuna noodle casserole?
    Or maybe your breakfast casserole? (Don’t remember if I’ve seen you do one or not)
    1 Cup extra sharp Cheddar cheese, shredded 
1/2 cup mayonnaise (if I use any "salad dressing", I do it half and half, as the mayonnaise really does make it creamiest and the salad dressing only adds a tad of zing)
2 jars (4 oz each) diced pimiento peppers, well drained 
1 can (4.5 oz) chopped green chiles 
1/2 cup thinly sliced green onions 
2 tablespoons finely chopped jarred pickled jalapeño chiles 
2 teaspoons Worcestershire sauce 
1/4 teaspoon ground red pepper (cayenne), if desired 
10 Eggs 
4 Cups shredded hash brown potatoes, drained
2 cups chopped cooked ham (I have used ground sausage, "horseshoe" sausage, as my kids call it, 
Chopped Italian parsley, (optional)
    Bacon- cooked crispy, drained and crumbled on top (optional)
    Heat oven to 350°F. Butter 13X9" baking dish with cooking spray. If I am making this in the warmer months, crockpot here I come-! (Low, about 4 hours)
    
In large bowl, beat cheese, mayonnaise, pimiento peppers, green chiles, green onions, jalapeño chiles, Worcestershire sauce and ground red pepper with electric mixer on medium speed 1 to 2 minutes or until creamy.
    
In another large bowl, beat eggs with whisk; stir in cheese mixture. Add potatoes and ham to bowl; stir until well mixed. Transfer mixture to baking dish.
    
Bake 43 to 48 minutes or until edges are golden brown and center is set. Let stand 15 minutes; top with parsley before serving.

      Pimento Cheese Breakfast Skillet
      4 English muffins diced into 1/2 pieces (tops and bottoms together makes 1)
      3 whole eggs beaten
      2 cups milk
      1 teaspoon hot sauce
      1 Tablespoon spicy brown mustard
      1/4 teaspoon salt
      1/4 teaspoon pepper
      2 (4 ounce) jars diced pimentos drained
      1/3 cup finely chopped green onions green part only
      2 Tablespoons fresh thyme leaves optional
      2 cups shredded cheddar cheese
      5 slices bacon cooked and broken into 1-inch pieces
      Preheat the oven to 350 degrees F.
      Spread the english muffins on a baking sheet and toast until just crispy--about 15 minutes. Remove from the oven and cool slightly.
      In a mixing bowl, beat the eggs and milk.
      Add the pimentos, mustard, hot sauce, salt, pepper, green onions, thyme and 1 1/2 cups of the cheese and mix well.
      Add the muffin pieces to a lightly greased 9-inch cast iron skillet or baking dish.
      Pour over the egg mixture and press down to make sure all the muffins are coated.
      Let the mix sit at least 15 minutes or overnight in the fridge. Cover if you are refrigerating.
      When you are ready to bake, add the cooked bacon to the top and cover with foil. Bake 20 minutes then remove the foil. Bake an additional 15 minutes until the mixture is set.Let stand 10 minutes before serving.
