    I am from the caribbean and ginger beer is a drink for christmas. We leave it to ferment and then enjoy with ice. We do add cinamon stick and whole cloves also. Some people add barley to help with the fermentation.

    I like to use the glass Perrier bottles. I've never had a problem. Just release the pressure every couple of days.

    I have GOT to try this! I love ginger ale. I've tried several of her recipes since I've been pressure canning ( since March 2021); and absolutely loved everything I've tried, the bone broth, yogurt cheese, apple cider vinegar, the list goes on. I'll repost a comment when I get it done.
    She really appears to have such a sweet spirit. I appreciate what she's taught me.

    Making ginger beer with powdered ginger years ago and using corked bottles..... The lids popped off late at night. the bangs scared everyone and the corks dented the pantry polystyrene ceiling tiles ! It does get active ! Take care.

    I discovered your channel a few days ago while checking out different people making homemade vanilla extract. So I subscribed. Then I saw you making bone broth, then gingerale. Now I'm hooked. I'm just found the bottle I wanted for my extract, so I'm making that first. My sister is roasting two chickens and saving the carcasses. I already have one. So now I have to buy the chicken feet.       Thanks Mary. I drank some vitamin water with zero sugar and got my digestive system all messed up. When I do that I get fever blisters on my mouth. I haven’t had them in a long time, but this time I got a bad case of it. So, I haven’t been out anywhere in public for a few days. I think the fermented ginger drink will help me.

Several weeks back I took to learning from you how to make lacto fermented pickles and they came out EXCELLENT and now as a result I'm making more and more of em! And then somewhere along my travels I found out I could make my own probiotic ginger ale and here you are teaching on it so now I get to learn from you again!     Thankyou for the history lesson! Very interesting! If people would eat and drink more of these traditional foods there would be a lot less sickness. I've just started fermenting sauerkraut, pickles and carrots. Sooo good!! When I get my nerve up, I'll try the ginger ale. Sounds yummy!

    Just started my first ginger bug Mary ,
    I also did my first ever brine brine today thanks to you !
    2 gallon glass jar in 3% tomatoes , green-beans , carrots , garlic, Basel.
    I then did a another 2 gallon in 5% brine for my cucumbers , onions and bell pepper I added no spices just wanted a fresh brine on those . THANK YOU MARY i'll let ya know how all this goes
    I have several two gallon jars so I made my 5% brine in one big gallon of water was easy ..

    Speaking on the subject of fermentation and swing top bottles, I was making kombucha in its second fermentation and experienced it exploding. I have to say I love the fizz of the added fermentation but now use a cooler in my pantry to enclose the bottles when I choose to use that method. Thanks for including that bit of info in your presentation 😉

    My swing top bottles, which I used for water kefir (not a kombucha maker, either), came from the Italian soda that Aldi's sells. I'd expect them to be able to stand the pressure, but everything has its limits. I had one explode in the fridge, while another one was in the fridge for almost two years. Once, a half-gallon canning jar exploded on the counter. The recommendation to put them in walled container is a good one! I'm about to try my hand at a ginger bug, but I think I agree - for a regular drink, water kefir is better. Depends on how much sugar the ginger soda ends up with.

    Ginger is something I have tried to grate SO many different ways over the years. There are only two ways I recommend: for a smaller amount use a microplane grater -- and for a larger amount, if you are fortunate enough to have a powerful high-speed blender (like a Blendtec or Vitamix) it makes life SO easy when you are going to be mixing it with water anyway....!!! (I would not try it even in one of those blenders without the water.)

    Thank you Mary, I love all of your videos! I saw another video where they use the bottles but they pour one serving in a small plastic soda bottle to use to test the pressure. They squeeze it at least once a day and when they find that the bottle is pressurized (firm), they know all of the glass bottles are done.

    I try this and your instruction very helpful. My fermented ginger ale come out perfectly, wonderful flavor. Better than store bought around here in my country.

    Hi Mary in my country we make fermented ginger ale but we call it ginger beer, we do not boil it we just let it sit in a dark area for 2 days and it is very tasty. We sweeten to taste and it's good

      Yes we make (and have done from my Grandmother) a 'ginger beer bug' ... I'm in NZ ... i now make a less sweet version ... along with Kombucha. We use undissolved sugar as a food for bacteria. Most naturally fermented drinks contain at least a little alcohol - my kombucha is usually 0.06 - 0.10 ... I expect Ginger Beer is about the same. We have Ginger Ale here but it's more a dark brown than the beer.

    I also peel the lemon and boil the lemon zest with the ginger and sugar.
    I don’t know, if this makes a difference taste wise, but it smells nice.

    Mary I made this twice and the second time is fantastic but you are right I had to burp the bottles . I am enjoying it even more then kombucha . It’s exlent with some strawberries
