    I don't know how this channel doesn't have a half million subscribers. I've been cooking on my kamado joe for 5+ years and have learned a ton of tips and tricks here. Keep up the good work!

      Wow, thank you! I suspect one would have had to have started 6-7 years ago to see those kind of numbers. Nonetheless, knowing that I've helped at least one person is my motivation for each video

      haha if you scrape them out well they are mild and I find I need to add heat back

    Love the jalapeño poppers. I love tossing them on mid cook while doing longer cooks like pork shoulders or briskets. Let’s then smoke low and slow to get the flavor, and then pop them in the air fryer for a couple minutes to crisp up the bacon. Perfect mid cook snack.

    Hi James,
    I have made these before, they are awesome. So tonight I am gathering some info, for an Easter cook …. Yes, odd I know. I hope to do the peppers on KJjr. I have the same pepper rack , hopefully it fits, I guess I will be checking tmro … indirect suggestions are greatly appreciated !

    Great call on precooking the bacon. I made this before and the taste was great, but not happy with the bacon....your technique will totally improve my version. THANKS FOR THAT!!!

    Great video, and I am looking forward to more Keto recipes. Mainly because of your channel, I will be getting a Kamado Joe when I have the money to add to my backyard here in Texas. I do have one pointer, you didn’t pronounce jalapeño correctly. You forgot the “y” sound that the ñ gives the word. It is just the Texan in me that caught that little mistake. Other than that, great video.

    Those look great! How do you keep your sloroller so clean or clean it? I’ve cooked a lot of chicken and mine looks nothing like yours.

      prevention is the best method. flipping the lid and letting stuff burn off after the cook until it stops smoking is the second best

      i lost 50lbs last year on keto but hit a pause in the summer, i am back in this fall and doing a mini series for Jan showing some recipes that helped us enjoy our BBQ while staying keto compliant
