- Rick Stein is one of my favourite chefs. I haven't had the opportunity to visit any of his restaurants in my life so I thought today would be a good day to head down to his restaurant in Barnes for a bit of seafood. I'm planning to go to Padstow in a few months time, so I'm looking forward to this one!

Keith Floyd is my favourite chef of all time, the man was a great chef, and above all, a normal bloke and a superb entertainer.
None of the current TV chefs come anywhere close.
That man was eccentric with a capital E! Craziness on legs but a fantastic chef and raconteur! Loved him.
The PC police would've shut Floyd down before he opened his first bottle of red.
He was up there for me as well -really demystified cheffing.
He was an incredibly man. Loved his shows Kev.
Keith is/was/will be the best by far, but I do like Rick too
Went to a book signing by Keith Floyd in the 80s.
He'd had a drink but a perfect gentleman. RIP " Dear Boy " ( as he would have said ! )

I've cooked this Dish many many times professionally. In Scotland on the East Coast. I'm also Scottish. The Cullen Skink liquor should be no thicker than whole milk. In other words there is no thickeners added only the potatoes. If the potatoes aren't over cooked you'll get very little starch released.
The Skink you're eating is cooked classically.

Keith Floyd was a genius and gave me a passion for cooking. Rick Stein is also amazing, but let’s not forget the great David Pritchard, who without, we would not know either of these great chefs. He was the one that brought Keith and Rick to our screens and sadly died in 2019.
Hi Mark. Oh yeah, I forgot Pritchard filmed both Floyd and Stein. Think Gary has a better relationship with his cameraman than Floyd had with his!

Nice for the legend that was Keith Floyd to get a mention too. Met him in his restaurant in Devon many years ago. He appeared at the urinal beside me. Normally, I don't chat in that situation, but I made an exception! Top bloke. Even washed his hands before the hand shake 😂

As for the thinness of Cullen Skink soup, yes, it can be thin, but it also depends on the type of potato used to cook it. I prefer to use floury "tatties" such as Maris Piper or King Edward potatoes, which can thicken it up a bit. Coming from a Scotsman that grew up in a town 12 miles from Cullen

Cullen soup is best with a thicker base as a milky, thin base I find unpalatable
Beautiful, we have stayed many times at Portsoy and eaten Cullen Skink often. There's a nice place in Whitehills that does a mean Cullen skink.
I think 'thin' is right, it's all about flavour. It is after all I believe, a fishwives recipe .

I loved Keith Floyd, too! He was very clever and quirky but truly knew his way around the kitchen. Rick is also a favourite. I wrote to him a couple times as his dog, Chalky, was related to mine! I have signed photos (complete with a paw print) from them, tucked away in one of his cook books! The food looked good - I think I would've picked the same things as you, in that set menu, though the lemon tart that went with the bottom options would also have appealed! Again, a fantastic vlog and brilliant review. Your style of presentation is great, so please don't change. Definitely my favourite food reviewer now - you don't complicate things with fancy language or fluff it out to lessen the times when things aren't so great! Thank you! xx

No I’m not convinced, not a lot there for thirty quid. People go as their under the misconception that Rick Stein is in the kitchen cooking ! Just another fancy chef but put his name to it and over charge.

I was in Falmouth a few years ago and fancied some fish and chips so I headed to Stein's chippy. I got as far as the price list and turned around. I recall it was about £18 for the basic cod and chips. Robbing bastard.
Fkin hell mate the average price of a half decent chippy is between 9 and 13 quid in the UK so at a place like that not that bad really is it. Especially of its nice nothing wrong with it once in a while

My step father was mates with Keith Floyd, met when they were in the army. Mum said that he was a really nice guy when she met him.

Have to agree with some of my fellow Scots on here Gary in that the Cullen Skink was very traditionally made, with a milky consistency which is perfect👍. I love Rick Stein so wish I could visit there😊

Glad you enjoyed your visit Gary. Place used to be called The Depot and had been there more than 25 years. Rick famously never wanted to open a London restaurant, so it had to take a place of such location and calibre to change his mind! My family and I can only afford to eat there on special occasions, but when we do we always push the boat out (pun intended! 😉) and go for the expensive seafood options, coz...when in Rome eh?! That includes having a cheeky bottle of wine which is always expertly selected and recommended by the staff and Rick's own son!
Had probably the best sherry trifle I will ever taste in my entire life on one birthday visit. I still speak of it to this day, while gazing longingly at the photo I took!

(88) Delighted that Rick Stein is still going for it. Really liked watching his cooking shows when I lived in NZ and also Keith Floyd. Everything looked picture perfect; personally I only had Cullen Skink that had a light broth like that one. Shed 5 (restaurant on the Wellington wharf front, not sure if its still there) only had it on their menu on the weekend. Always came with a fresh bap made in house. I would have given it a 10, but I have a small appetite.
I was wrong about the soup so apologies and portion excellent if you don’t have a big appetite 👍
I get that this is a more refined version of cullen skink, but still feel it could've done with a bit more body... Glad to hear it tasted so good though, and that it came with bread!!
I've used Jerusalem artichoke instead of potato when making cullen skink before to keep it a little lighter and add some flavour interest!
I have to agree with you. I felt it needed a bit more density but others have commented that it's fine!
He has a restaurant here in Poole, in Sandbanks, the very expensive bit of Poole where all the houses overlooking Poole Bay look like they were made in Minecraft. The restaurant is also very expensive and mediocre at best, but it's much loved by the sort of person who really, really wants to be allowed into the golf club.
Lol I know what you mean about Minecraft, I went in one about a year ago, was pretty unusual inside too, felt like I was in a rich serial killers house 🤣 ….cool to see the sea looking either way from inside the house though 👍

I am not familiar with Minecraft (I sort of worked out it was a computer game) either apart from heard the name - I just assumed it meant it was like some AI artificial game where everything was picture postcard perfect nothing out of place like in the movies.

I always enjoy the way Rick Stein combines literature wuth food. He'll read a poem or a passage from a novel to put the dish into historical context. I find the mix of history and food fascinating.

Three great plates of food and an idyllc location on the river. You mentioned the mussels as a starter. As a huge seafood fan, that would have caught my eye. Whilst I love a sticky toffee pud, I think I would have opted for the the ginger pudding, as long as it had a decent kick of ginger to it.
I jus5 wanted to see what the set menu looked like on this occasion and will be trying seafood soon 👍

Another classy looking place with great looking dishes. But haddock starter, haddock mains?!?! I too thought the soup far too thin, that's not the way i've had/seen it in the past. And on (my) screen, the fishcakes looked a good size, and with there being 3. But didn't look like there was enough sauce to go around. And STP, you can't go wrong, ha. PS, scratch the starter/main comment, I once had chicken livers, followed by calves liver. The tum wants what the tum wants eh 🙂

There’s so many variations of Cullen Skink. Yes it should be thicker and should also contain potatoes to help thicken the sauce and maybe leeks and a little fish or chicken stock. That’s how we used to do it in the restaurant.

I'm glad you mentioned Keith Floyd. What a character. Somewhere in my house I've got his book 'Floyd on Fish'. I don't think I ever made any of the recipes but it's worth reading just for his asides. You can imagine them in his voice with the accompanying mannerisms.
In the intro to one- and bear in mind the cultural references pertain to 1984- he says something like "this is a dish that you might even persuade your orange haired kids to eat, if you can get them out of their bedrooms where they're listening to Headache 100".

Rick Stein. What a gentleman. Loved his programme’s for years. His son (can’t remember his name) was/ is also a cook and a fine one too. Unfortunately ended up under the father’s shadow and never became a Rick. Kieth however was a genius. Great video guys. 👍

Hi Gary, you're travelling to Padstow to try Rick Steins fish and chips? Please use this as a benchmark - 5 out of 10, poor. I'm down there every year. They're really not great.

@@GaryEats I would never get fish and chips from a 'top' restaurant. They always mess with it too much. Fish and chips is always best from your local chippy. I live in Australia though, and my local pommy fish and chip shop is 50 miles away 😞
I visited Rick Stein’s cookery school in Padstow many years ago with my brother which was a Christmas present from my husband. We had a great few days and the booze was definitely flowing as was the food ! It was definitely an experience. I was surprised you ordered two smoked haddock dishes. Great vlog as always

Hi Gary, looked like a pretty good dining experience. Yes, I've always loved Rick Stein's TV programs. You get a lot more than great food. You get Rick reading Thomas Hardy poems, excerpts from novels, and the culture and history of the places he visits. Spain and the story of El Cid comes first to mind. A great man, much loved by his fans who number in the millions. When I was a kid, I'd sit myself down on the couch, mum's terrific Sri Lankan curry on my lap, and watch Keith Floyd, imagining I was having some of that rare-vintage French red he was quaffing. What an extraordinary man ! He seemed to have such a pleasant nature. ( I have to figure out how to get onto Telegram today ) . My score was 9/10. Thanks Gary. Another fine noshery you got us into !

The combined portion size looked about substantial. Quality was definitely all over it. Price was acceptable. The soup was too watery, in my opinion, as well.
The dessert absolutely carried this through for a solid, if not perfect, score.

Love watching Rick Stein's programmes, and the old re-runs of Keith Floyd. Glad you've gone to a "posh" restaurant for a change, and shown everyone that they often do cheaper set menus, especially at lunch times. I went to The Cross at Kenilworth and was blown away at how good their lunch set menu was, and whilst an expensive treat, the bill wasn't as scary as I assumed it would be.
I really like Keith a real character 🍷🍷 we try to mix things up on the channel so appreciate your comment
Keith Floyd was the best for me an absolute legend, got to admit Rick stein is the best tv chef on tv today by far haven't got time for the other celebrity chefs, the meal looked good the soup looked perfect to me as i don't like thick soups i much prefer a broth type soup or a beef consommé, fish cakes looked a decent portion alas I'm not a fishy man so in my case i wouldn't have ordered the starter or mains but the pud looked brill, and the location was fab, great review as normal 8 was a good score i think a 9 would have been fairer but you were there so i take your word for it, another gem thanks Gary.

I'm not a seafood person as such, my culinary palate stretches to Haddock or Cod encased in a light crispy batter, Monk fish in a curry, or a Salmon baked with accompaniments of crisp fresh salad and new potatoes. My wife and myself ate at Rick Stein's restaurant in Padstow back in the early '90's, it was nothing out of the ordinary but there were queues like you wouldn't believe, it had a take away part as well. I can't remember the cost exactly but I can remember summing up that it wasn't worth the price difference from most other fish and chip eateries.

I took my father to here for his birthday excellent location, nice atmosphere, my father ordered the Thai Fish Curry, I had a taste of it at the end, it was the best Thai fish curry I've ever eaten, If only id tasted it at the beginning I would have devoured it!

This was an especially interesting chapter to watch. As much as I love watching Gary eat various breakfasts, watching this complete seafood dinner with its variety of ingredients was even more interesting. The eggs with the fish cakes were a very unusual combination.

I've been to this rick stein's multiple times. I love this restaurant. I'm not sure if the Maitre'D Jean-Francois was working when you were there (youngish looking guy with blonde hair) but he is simply fantastic. First time I was there my friend tipped his glass over and it broke. TGhey moved us to another table, replaced our drinks and offered to re-make my Sea Bass but as I was 3/4 through it anyway and don't like wasting food I declined.
As a result of that service, I have been back for every single menu change for 4 years. They also have lovely seating overlooking the thames.
He wasn't working this time but the staff were great. That's very kind of them to do. How was the sea bass? I still live in regret that I didn't have it
10/10, considering where it is , overheads, location views, looked top class , well done Gary,see you on the next one.
