To prevent it from melting so quickly you should put it in a cooled plate or bowl just put any plate in the freezer for a few hours and you're good to go.
You have to wait for the ice cream to melt when you have a lot. Mixing it is just going to stop it from cooling. You just have to be patient and wait. Love your channel btw
