These dude is just bursting with positivity in spite of a challenged childhood.
I visited Hong Kong in 2017 and stayed at the evergreen hotel which was around the corner from this noodle shop. Needless to say, I ate there almost every night! And the noodle stand wasn’t as nice in this video. I really wish I could go back just to eat these noodles. He has some bomb spicy fish balls too.

Enterprising determined Hong Kongers, I expect nothing less. Some people the folks of HK. Great to see him keep the traditional noodle dish alive, I remember this well.

Herman top two recipes are doggie noodles and imitation shark fin soup with shredded duck meat. It appear the doggie noodles are the top seller.
These shops typically carries authentic recipe from their grandparebts and is transfered and kept to later generations.

Why don't they tell you where is this place located?
It’s in sham shui po. Opposite golden computer center. I’ve had it once but personally I don’t like it. The noodles have a strange paste-y texture kind of like cheap udon noodles and for the imitation shark fin soup they don’t provide red vinegar which I personally think is the best part. I actually asked for vinegar and the shop attendant was pretty rude and said they don’t eat it that way.
Long time fan of this place. But noticed something about these HK Tourism Board videos: they always have to feature some white people? are there no other foreigners in the city?
这在南宁叫“粉虫”,手工搓出来的,还是两头小中间大的形状。南宁一般都是炒粉来吃,“老友炒粉虫”,几乎不做汤粉。

Imitation shark fin soup is made with Vermicelli pieces instead of actual shark fin. Mixed with shredded duck for this shop (usually it’s shredded chicken). And then there’s wood ear mushrooms and shiitake mushrooms in slurry soup.
