Tried this last week on my MB800 and it was great. Have never done Beef Short Ribs before, but will add it to my menu rotation at home. Nice rich flavor, and it made several yummy meals, including Tacos, BBQ Mac & Cheese, and even a BBQ Salad. Thanks for showing us this one.
I know that this is very late, but I’m planning to make these for a date night for my lady wife and I this weekend. Instead of wrapping it in foil, I’m going to use a foil pan filled with beef broth with some chopped onions and smashed garlic cloves (like you did with the birria tacos). Then I can turn the braising liquid into a sauce and serve it all up with a butternut squash purée. Wish me luck!
I'm trying this today. I picked up some boneless short ribs at Costco. Started the smoker at 9 AM. I'm using SPROUTS Cajun spice dry rub seasoning. It gives the beef a little kick.
I need to pick up some of those from Costco. I use to get them there frequently but it has been a long time. (They use to be the bargain buy, but not anymore.) I’m liking that cutting board you have with the brick pattern! Who makes that?

Most of the videos I've seen for smoking recipes are done on a pellet grill and at the end of this video you both mentioned it had a different flavor using the drum/barrel smoker. What sort of difference did you notice and how would you describe it? Was it a heavier or more smokey flavor, did you like it better than a pellet grills, or just different? I ask because I also a pellet smoker and have been missing that deep smoke flavor I get when grabbing Q from my favorite local places.
I have a Traeger and just bought this type of rib today for the first time. Would the same time/temp/method be the same on my Pellet Grill? I would love to be able to make these for Mothers day so any suggestions before then would be amazing, thanks!!
Those look great, but the best way to cook that quality of boneless beef ribs is to treat them like a NY strip, grill them hot and fast to 125, to die for.

Salt City Drum Smokers!
How often did you need to replenish the fire in that drum smoker?
Never. Those drums can go 24+ hours on 20lbs of charcoal without touching them!
