    A clarification for anyone who might be curious: the buffalo milk featured here is from domesticated water buffalo, not the buffalo (aka bison) that Americans, Canadians, and some western European folks are more familiar with. Those are not at all suited to milking (smaller udders that would require custom equipment, milk that isn't great for cheese-making, and the whole being fully wild animals that weigh 1-2 tons thing brings a LOT of physical risk to the idea of milking by hand).

      Well, you probably don't know that domesticated water buffalos are really common in America. Do you know what they are for?? Mozzarella.

    This is going to be a great series. I mean, I'd never heard of this buffalo milk tradition in Cantonese cuisine. Several types of pudding? Cheese? Wow. Watching this episode expanded my understanding of a food tradition that I thought I had a pretty good knowledge of.

    1 Bowl Milk Pudding. 1. Rock Sugar & Pandan Leaves boil (Syrup) 2. Milk 3. 1 Egg (small). Method: Mix all together in balance. Steam in very low fire for 20 to 30 minutes till cook. Check timing

    Buffalo cheese slices are the best. Used to be able to buy them in HK but now really only in ShunDe. Great in plain congee 😋😋😋 👍🏻
