Marie is showing how we make her old fashioned cornbread dressing and chicken gravy. Marie has been making dressing like this for fifty years. She learned how to make great dressing from her grandmother. The gravy is a shortcut for making a great chicken gravy without a lot of work. We hope that you enjoy this video.
Cornbread Dressing
Marie’s Old Fashion Chicken and Dressing Recipe:
6 to 8 cups of cornbread crumbled up
3 to 4 cups of biscuits crumbled up
2 chicken breasts (cooked and shredded)
1 cup of celery diced
1 cup of onion diced
2 tsp of sage
6 cups of chicken broth ( add more if needed)
1 can cream of chicken soup
½ tsp salt
½ tsp pepper
2 eggs
Mix all ingredients together and put in a 9 X 13 greased pan
Bake for 45 to 50 minutes at 350 degrees
Chicken Gravy
2 cans cream of chicken soup
1 cup water
¼ tsp salt
¼ tsp black pepper
1 tsp parsley flakes
½ cup chicken breast
2 or 3 boiled eggs chopped up
Mix all ingredients in a pan.
When I was growing up, I always tried to help my mother cook. I always helped make the dressing. Alot of people do not really do not know how to make it. We used to have dressing all year round, not just at Thanksgiving. I love chicken breasts with the bone, they do have more flavor. Some grocery stores do not even sell them but the boneless. My mother would cook a larger whole chicken she called a hen. LOL She always put cornbread, day old bread toasted, pepperidge farm seasoning a few crackers, egg, sage, chicken broth and just a pinch of baking powder, why she did that I do not know. LOL My aunt used to say it made it fluffy. LOL I try to cook like my mother did and I do not stir it, I toss it. I put pats of butter on top, and it is really good frozen too. I learned so much from my mother, and at the holidays, I try to honor her memory and fix desserts like she used to make. I do not buy fresh coconuts anymore and grate them by hand, I use the frozen coconut. It is just as good. Holidays are especially hard for me because I miss my mother so much. I am going to try your recipe for dressing, it sounds so good. It is funny, I do not have a recipe, a little this and a little of that. I never thought I would be able to cook kinda like her. LOL I enjoy your videos so much. Marie and Calvin, yall are so special to me.

I used to make my own cornbread too and make cornbread like Momma did. I now buy the Pepperidge Farms cornbread stuffing mix. Looks good Marie.

I wanted to tell Marie that I made a dinner printed on back of a Campbells turkey gravy can using center-cut pork chops breaded in Pepperidge Farm herb dressing covered in the gravy--talk about easy and delicious. I'm not finished. I also made Marie's green beans as a side which I wrote down at one time for later use, using chicken broth, bacon, and 2 T. brown sugar, etc, and my friend told me it was really good. She enjoyed how it tasted, and so did I. That will be my go-to recipe from now on for side dish green beans. Cooking down those beans until the broth evaporates really makes a difference compared to just heating them up for five minutes till warm.

Marie, the only difference in my recipe and yours is I add about 1 cup of the unbaked dressing to the gravy mixture. Everyone thinks it’s giblet gravy.

Hi Marie. your dressing looks really good. Why do you put eggs in your gravy? Marie i have the same issues that you do .I started passing out.I have been in the hospital 2 or 3 times.I get to dehydrated . I can't drink a lot. I was looking at your hands as you wear cooking. You fingers swell just like mine. I can't wear my rings anymore i miss them.
Thanks very much. We have been making gravy with eggs in it for as long as we can remember. They are not necessary but that is how we do it. Dehydration is a hard problem to deal with. Calvin watches me closely to make sure that I eat enough and drink as much liquid as possible.
