How to Cook a Delicious Callos Recipe. This is really a big & special dish in the country as it needs 4 to 5 hours cooking time, truly worth the wait. We love this version, hope you'll love it too. Bon appetit. All ingredients are optional, modify as per your liking. Take everything in moderation. "Health is Wealth".
How to Cook Yummy Callos Pinoy Style
Ingredients:
3 tbsp - olive oil
1 cup - long red chili
150 grams - smoked bacon
1/3 cup - garlic
2 tbsp - spicy chilis ( + 6pcs for garnish)
1 heapful cup - white onion
100 grams - Chinese Chorizo or Chorizo De Bilbao
1 tsp - ground black pepper
50 grams - chicken sausages
1 heapful tablespoon - spicy chili powder (optional)
250 grams - tomato sauce
350 grams - Beef Tripe
350 grams - Trotter
2/3 cup - carrots
2/3 cup - canned chick peas
*** Beef tripe & trotter Stock
1 pc - beef cube
2 stalks - spring onion
Parboil:
Water - enough to submerge all ingredients
2 pcs - bay leaves
1 tsp - black peppercorns
1/2 cup - vinegar
*** beef tripe & trotter
Cooked in Pressure Cooker
***beef tripe & trotter
1 stalk - leek
2 pcs - bay leaf
1 tbsp - ground black pepper
Water - 4 cups above ingredients level
Cooking time: approximately 4 hours (can shorten time to 2 hours if cook longer in pressure cooker)
Serving: 5+ people
