I, too, read such explanation as you have from Wren n Martin and Practical English Usage. My heart filled with joy to understand this kind of concept. However, in the next moment my joy vanished, when I started solving the exercises from Wren n Martin in which the book used that and which interchangeably, and so was with that and who. This difference between explanation and exercises baffled me to great extent. According to Wren n Martin We always like boy (who/ that) speak the truth. We saw the dog (which/ that/) Worried the cat. Here is the pen( which/that) You lost. These sentences have been taken from Wren n Martin high school Grammar in which both the options provided in brackets can be used from which what should we understand that we can ignore essential and non essential clauses.
