Zasar Legumes - Mauritian Vegetable Pickle

- This is a much requested simple recipe for the mauritian vegetable pickle we call Zasar Legumes. Sorry for the shaky camera work my 11 year old nephew filmed this for me and next time I think we will use a tripod! Thanks guys. So here's the recipe....1/2 white cabbage, 3 carrots, 15 runner beans, 2 red onions all these vegetables need to be julienned (thin slices) 2 tbsp garlic ginger paste, 6 red chillies slived lengthways 2tsp turmeric powder, 1tsp mustard seeds, 1tsp fenugreek seeds, vinegar and salt according to taste but approximately 2 tbsp vinegar.

Quick snack idea!
I chucked some zasar legumes in a savoury pancake mix, with some spring onions & peppered mackerel - it was soooo good!
Kinda like a spicy Mauritian version of Korean sea food pancakes 😍

We prepare this here in germany. Just try it when together when eating noodles and tomato sauce. Perfect Video. We put some salt in the water at the first step. Sure you did it. One can also adjust some pieces of cauliflower too in it. Thank you for sharing 💓

I ate Maurician Zasar Legumes several times in Mauritius many years ago and I loved it. I've been looking for the recipe so thank you so much for this video. I just want to ask how much oil do you put in this recipe and how do you store the achar, in the fridge or outside?
I store in the fridge and the oil is in the recipe :) but the oil is up to you really as it helps preserve the Zasar

Fenugreek seeds ??? This is a spice that we don’t use in Mauritius!! We don’t put onions in zasar legumes. Pe Trop faire zest

I am sorry to disappoint you but this is not the authentic way to make "Zasar Legume" . I have given up searching for Mauritian Recipe on the net . When I want to cook something that I enjoyed eating when I was still living in Mauritius , I phoned my dear mother and she would gladly provide the proper ingredient , the specific amount required for the quantity and step by step n how to prepare it .
Nowadays anybody Tom , Dick and Harry is a chef 😆 . To be honest while trying to be impress people they are actually depressing you . By the way you don't put onion in Zasar legume , the spices doesn't need to cooked in hot oil . No salt added when blanching veg . By the way only less than one min required to blanch veg otherwise you will end up with a soggy Zasar Legume .

The title is "Misleading " .The award winner , author and owner of Restaurant should use the term " A variation of Achar Legumes derived from an authentic Mauritian recipe" or something like this . I am sure the Chef & writer can come up with a shorter version . Or perhaps UK Version of "Mauritian Achar Legumes" . By the way Criticism is not Patronizing" . Not acknowledging once mistake is to express ARROGANCE & PRIDE .

I totally agree with the first writer comments - incorrect information you see sharing eg onions is not required ..and also cooking is now glamarized where its should be not through tv that one learn how to cook. Albeit it's your version.
