Former bouncer here (7 years) - George probably was the most useful guy because, unlike in Georges view, you do need skills, *verbal skills* and a *positive demeanor* if you want to stay safe in that job.
I have a suspicion that George St. Pierre did a great job and everyone probably wanted to work with him because I suspect that having him on the crew meant fewer fights, less drama, and more enjoyable shifts on the job.
Sometimes, those biggest guys (300lbs+ or 6'5'' and above) are the worst to have around...
