    Great video, Dave. I do it the same way when I wanna put smoke on a steak. More times than not though, I find myself preferring to sear first, that way I can get the sear that I want, without having to risk over cooking steak.

    What do you use for a thermometer for the internal temp? Instant read or a probe left in?

    I like to do the *exact* same thing, except, after searing, I like to put a little soften Kerrygold garlic butter on the steak and let it rest with that butter melting on top, it tastes so good! 🤤
    I haven't used pecan (yet), I typically use post oak. I don't know how different that is from Pecan wood.

    Do you turn the steak when in the fridge? Sorry if it's a novice question, but does gravity help here? Would the underside salt go into the meat as much as the upper side?
