Great video, Dave. I do it the same way when I wanna put smoke on a steak. More times than not though, I find myself preferring to sear first, that way I can get the sear that I want, without having to risk over cooking steak.

I like to do the *exact* same thing, except, after searing, I like to put a little soften Kerrygold garlic butter on the steak and let it rest with that butter melting on top, it tastes so good! 🤤 I haven't used pecan (yet), I typically use post oak. I don't know how different that is from Pecan wood.
Great video as always! Do you have to wait a while to get rid of dirty smoke from the lumpwood or can you just pretty much start cooking straight away?
Do you turn the steak when in the fridge? Sorry if it's a novice question, but does gravity help here? Would the underside salt go into the meat as much as the upper side?

What do you use for a thermometer for the internal temp? Instant read or a probe left in?
