While creating highlights at 5:32, I covert to smart object then click the layer thumbnail to load selection, make work path 1.5 and it's still a vector and as soon as I add a solid layer mask it turns back into pixels. Any info as to why this is happening?

Yes, without hours and hours with the pen tool in Adobe Illustrator, Microsoft PowerPoint or Affinity Designer. And these vector artworks in Photoshop actually look better than those in the specialist vector programs, in my opinion.
