For the sauce, my mom usualy boiled a lot of white sugar and few block of palm sugar, chilli, tamarind, fried peanut powder, little of vinegar and salt, no pepper, it's ok without shrimp paste... boil until it thickened and dont chop the fruit, just use mandeline or cut in jullien shape

In Malang City, we usually call this kind of Rujak is Rujak gobet, but the fruit is not cut but grated with grated cheese or a grater hole is slightly bigger, the broth is runny, dominantly spicy, sweet, salty, and a little taste of the shrimp paste. try using apples, pears, guava, manggo for sour taste or other fruits that is juicy and slightly hard texture, not like papaya ... try to taste it must be delicious,... The second version we call rujak manis, the sauce is thick from palm sugar, usually added with fried peanuts in a fine blender to add to the texture of the sauce (no shrimp paste needed), the taste is predominantly sweet,sour taste come from the type of fruit we choose that tastes sour, than chili sauce is made separately like SOTO AYAM, the fruit is thinly sliced, usually using papaya, pineapple, bengkoang , melon, watermelon, guava, mango, you can also add fried tofu (Tahu pong(TAHU from TAHU GEJROT)) it's really a great combination Just watch on youtube recipe rujak manis, rujak gobet, rujak buah...many version of rujak...good luck next trial...👍👏👏

Daniel, rujak tidak membutuhkan air. Air di rujak adalah air dr mentimun dan nanas. Pepaya dan mangganya yang setengah matang, tidak boleh matang. Dengan blender kamu campur semua bumbu (brown sugar, salt, cabe, sedikit sekali trasi) + beberapa potongan mentimun/nanas. Setelah halus, kamu masukkan dalam potongan buah TANPA AIR sama sekali. Jika suka kacang kamu bisa tambahkan blenderan kacang yang masih agak kasar. Selamat mencoba Daniel.
It is more like Asinan instead of Rujak, you need to grind kacang goreng together with brown sugar and stuff , the sauce should be ticker and no need to put it all along with the fruits. Just dip the fruit to the sauce.

Sekedar info .jika g suka terasi bisa diganti dg ebi yg di haluskan ..kalau kuah yg kental..ntar kalau di malamkan di kulkas jd banyak.tdk semua buah cocok untuk dimalamkan ..biasanya mangga. Jambu biji. Pepaya mengkal. Kedondong.jambu bol. Jambu air..timun .bengkuang..agar enak sausnya dimasak hingga mendidih... Gula merah 200 gr Gula pasir 50 gr asam jawa/cuka 50 gr/ 1sdm(secukupnya) Garam 1Ssdt Terasi/ebi(skip) Bawang putih 1siung Cabe rawit 12 bj(sesuai selera) 1.5 gls air Haluskan ebi dan bawang putih Rebus semua bahan dg api sedang sampai mendidih. Cek rasa...dinginkan dan campur dg buah..diamkan dalam kulkas sekitar 2 jam...wah rasanya sdh meresap pasti enak...dimakan untuk menambah selera makan...pa siang ...mantul... pake es krim jg enak...selamat mencoba...
Bumbunya tuh cabe gula diuleg tambah terasi dikit sama asem jawa ga usah dikasih air nanti juga berair sendiri klo dicampur buah2an jangan lupa dikasih garam

Daniel, the original sauces for rujak, we don't add lime/lemon, for thick sauce you need add some Roasted peanuts then blend together with small chili ( cabe rawit ), add palm sugar, and tamarine.. The sauce that you made right now similar with "saos cuka" or vinegar sauce for empek-empek / fish cake ( traditional food from palempang ).. The sauce very light .. And also we don't add orange or pumpkin in rujak.. 😁😁

The ingredient look like Rujak or asinan. Because it watering is asinan but you must cooking plus micin or soup from chicken/beef. Try sop buah with the fruit like that.

I usually make the sauce just like we make syrup. The liquid is thick. It will watery by the juice of the fruits. No need to add much water.
