@_elive_ I used to work in the ice cream biz, working with fluid milk, cream, powder. That packaging is not the same as shelf stable septipack. That's regular every day commercial packaging. No matter how hi temp or how long it is pasteurized, it cannot sit out for hours.

i believe they are calibrating the machine. espresso machines tend to be a bit finicky and need to be adjusted each morning to ensure the best quality.
It’s a Dial in process my friend. One of the reasons for that is to warm up the grinder and to flush out the chemicals from coffee machine group heads which has been cleaned on previous day and also to see how first few espresso shots are looking and adjust the grinder according to recipe.

As long as you don’t have the immune system of a new born kid, you are not gonna die.
The dairy must be UHT pasteurized, killing harmful bacteria. So you can keep it out of the fridge unless opened.

Yes, milkman has keys to the shop. It's dairy milk and nope the milk doesn't go bad unless left outside the fridge more than 3 hours
