This Norwegian cake with coffee cream mousse is so delicious that I bake it almost every day! Quick and easy! Cake in 15 minutes! You've never eaten such a tender cake before. The soft and crispy cake with meringue and coffee cream is so tender, it melts in your mouth. It's the best version of Norwegian cake! Anyone can bake this delicious cake! So tender and airy! Very tasty, a cake that you can bake every day!
Ingredients / Recipe: (1 cup = 250 ml)
120 g soft butter (1/2 cup)
80 g sugar (2/5 cup)
4 Separate eggs
Add the egg yolks gradually
100 ml milk (2/5 cup)
120 g flour (4/5 cup)
30 g corn starch (3 tablespoons)
1 teaspoon baking powder
1 teaspoon vanilla extract
Important: clean the blender rods thoroughly now!
The bowl with the egg whites
A pinch of salt
Gradually add 180 g sugar (a little less than 1 cup)
Baking pan: 24 x 37 cm (9.5 x 14.5 inches)
Sliced almonds
Bake cake at 170 °C (338 °F) top and bottom heat for 30 minutes
250 ml whipping cream (about 34% fat) 1 cup
2 tablespoons instant coffee
40 g powdered sugar (1/3 cup)
200 g cream cheese (4/5 cup)
