I've done little tests on meats and prep, as you touched on, the buoyancy will mean that the meat does not alway get to the bottom before it drifts off, and not all meats are the same. Still the best bait for me.
I've been known to chop the meat up and leave it spread out on kitchen roll overnight. What that does is it makes the meat sink slower through the water and is worth trying in summer when you are getting bites on the drop. Also when the meat cubes have been left out to dry a little they form a slightly tougher surface on the bait and they stay on the hook better. Obviously If the fish are staying on the bottom then it's not worth trying this trick.

If you do freeze it, probably best off just using it for feeding as it does change the texture and make it fall off the hook a lot easier. So always best with fresh stuff for the hook at least.
you should have never put your luncheon meat or bacon grill in water because you take the oil out of the meat and you need a oil in the meat to attract fish I have used meat all my life so I know what I'm talking about and also I always catch lots of carp and fish on meat I never feel meat the water I use feeder pellets
🤦♂️ putting it in water like that stops it drying out and takes the fat out purposely. So it sinks at a uniform rate. These lad have gone more fishing than you would do in 3 lifetimes. It there job. Won 100.000 s in prize money. I think they k ow how to fish meat
