Healthy Cream of Chickpea Soup The African Way

  • CREAM OF CHICKPEA SOUP
    INGREDIENTS 500g Boiled chickpeas, 2 medium sized chopped onions, 2 stems chopped leek(optional), 2 stems chopped celery(optional), Pinch of Salt white pepper, 2 tablespoons Cooking oil, 100 mls Cooking cream Cumin(optional), Garam masala(optional)
    (YIELDS 4 PORTIONS )
    PROCEDURE
    1. Sweat the onions in a saucepan
    2. Add cumin and garam masala
    3. Add the leek and celery and cook until tender
    4. Add the boiled chickpeas, cover with water and bring to the boil 5. Reduce the heat and simmer for 20 minutes
    6. Remove from the heat and allow to cool
    7. Liquidize in a blender
    8. Pass through a conical strainer or sieve
    9. Return to the heat, season with salt and pepper to taste
    10. Add the cream and allow to simmer for 5 minutes
    11. Serve piping hot
