Caramel Cornflake Brownie Recipe
Ingredients:
Cornflakes-
125g cornflakes
1 tbsp malt extract
40g caster sugar
40 unsalted butter, melted
1/2 tsp salt
Brownie-
110g unsalted butter, softened
110g dark cooking chocolate
220g caster sugar
2 eggs
80 plain flour
30g cocoa powder
1/2 tsp salt
1/2 baking powder
Caramel-
225g caster sugar
150g thickened cream
75g unsalted butter, softened
1 tsp vanilla extract
Method:
1. Pre heat fan forced oven to 140C
2. Line a baking tray & set aside
3. Add cornflakes to a medium bowl
4. Add salt, caster sugar, melted butter & malt extract
5. Use a spatula to combine all ingredients. Make sure all the cornflakes are coated. Don’t worry about the malt extract clumping because it’ll melt in the oven
6. Transfer cornflakes to lined baking tray
7. Use the spatula to spread the cornflakes
8. Bake for 10 minutes
9. Half way through baking use the spatula to flip the cornflakes around. When the cornflakes are done baking set the tray aside & turn the oven temperature up to 170C
10. Whilst the cornflakes are baking add chocolate and butter to a heat proof bowl
11. Melt the chocolate in the microwave in 30 second intervals. Mix well between each interval so you don’t burn the chocolate
12. When everything is fully melted set the bowl aside
13. Add caster sugar and eggs to a large mixing bowl
14. Use an electric mixer to beat on high for 1 minute until fluffy
15. Add the melted chocolate
16. Use a spatula to fold the ingredients together until combined trying not to deflate the mixture
17. Add flour, cocoa powder, baking powder & salt
18. Transfer the mixture to a greased & lined square 8 inch baking tin
19. Use the spatula to spread the brownie batter around and smooth it out
20. Bake for 20-25 minutes depending on if you want the brownies to be fudgy or cakey
21. When the brownies are done baking set the baking tin aside
22. Add caster sugar to a large saucepan over low heat
23. When the sugar starts to melt slowly start mixing it. Use a long wooden spoon for this because the melted sugar will be extremely hot. The sugar may clump up but it’s ok because it’ll melt
24. When the sugar is all melted take the saucepan off the heat
25. Slowly add the thickened cream in intervals whilst mixing quickly. If you add the cream in too quickly and everything turns to rock it’s ok just add the rest of the cream in and put the saucepan back on low heat stirring until everything is completely melted. Then take the saucepan back off the heat again
26. Add a bit of butter in a little at a time mixing fast with every addition until all the butter is melted
27. Add the saucepan back on the heat but this time turn the heat up to medium. Mixing until the caramel reaches 110C
28. Take saucepan off the heat and add vanilla extract
29. Mix to combine
30. Transfer the cornflakes to a bowl and cover with caramel
31. Mix to combine and evenly coat the cornflakes
32. Transfer the caramel cornflakes to the brownie tin. Use your wooden spoon to spread and press the cornflakes into the brownies
33. Leave this on the bench to set for 30 minutes & then cut into desired portions
& enjoy!!
