- Indian goat curry is well known for its deep and intense flavours worldwide. This is considered one of the specialty curry in India and abroad. Basic goat curry has all the rustic flavour you want in a curry. Lesser saturated fats and earthy/grassy taste of the meat make it even special.
Recipe
Serves 3-4
Stage 1
1 kg goat meat cut into bite-sized pieces
1 tbsp ginger and garlic paste
2 tbsp plain yoghurt
2 tsp coriander powder
1 tsp turmeric powder
1 tsp red chili powder
2 tbsp fried-onion
2 tbsp chopped coriander
1 tsp salt
Spice Mix
1 tbsp fennel seeds
4-5 cloves
4-5 black peppercorns
1 flower of stone moss
1 mace blade
2 long black peppers
4 black peppercorns
Stage 2
4-5 tbsp vegetable oil
2 inches of cinnamon sticks
4-5 cloves
3-4 black cardamoms
3 bay leaves
4 onions sliced (medium-sized)
2 tbsp ginger and garlic paste
1 tsp turmeric powder
2 tsp red chili powder (mild)
1 tsp roasted cumin powder
2 tsp coriander powder
1 cup plain yogurt (whisked)
1 tsp fenugreek leaves
salt to taste

This guy is hardcore! Doesnt shy away from the spices, both in variety and amount. A culinary logic behind everything he does. I could sense the aromatics seeping through the screen as I watched.

I went to the Indian buffet yesterday. I wasn't that hungry but I wad just taking someone out for their birthday. I only had one plate. I regret it so much, I only had a small portion of the delicious goat curry and now I'm craving it!!!!!

I was so inspired by your goat curry recipe, i started hunting for 'Goat meat' online (as GOAT MEAT is not available in local shops in London) and found the right source (Dorset Meat Company) 200 miles away. They will deliver it in 4 days and I can't wait. I also have ordered MDH MEAT MASALA from Amazon right away. For me, the caramelized onion taste is overpowering everything else. How can I balance it? Am I burning the onions??
Didn't have mace, long pepper or the stone flower, and used beef because I couldn't get goat at the local store -- still turned out boss!
