How to Clean a Cast Iron Pan

  • Well-maintained cast iron skillets can last a lifetime and are essentially nonstick when properly seasoned.
    How to clean your cast iron pan:
    1. Wash by hand while still warm.
    2. Immediately dry with paper towel or cloth.
    3. Lightly coat pan with vegetable oil or cooking spray to help maintain the natural patina of the cast iron pan.
    Do NOT soak the pan or leave in the sink overnight as this will cause the cast iron pan to rust.
    How to Remove Food Stuck to the Cast Iron Pan
    1. Boil 1/2 inch of water in the cast iron pan to loosen the stubborn food residue.
    2. Rinse, pat dry, and season.
    3. If food residue still remains, add kosher salt and a small amount of water and heat your pan to medium to create a paste. Scrub with a sponge using a pair of tongs or wooden spoon to remove stuck on food.

    After drying with a towel put the iron on low heat for about 3-5 minutes. This will remove all excess moisture! Also the lowest heat will make it perfect for reasoning. Just poor a little oil in and rub it in with a paper towel. The oil will smoke if the pan is too hot. If so let it cool for a few seconds. Always reseason a pan when it’s hot. The pores need to be open for the oil to get in! There is a certain cowboy cook on UA-cam that is the goat for cast iron care and southwestern cooking!

    This is the most succinct, useful video on cleaning cast iron i have found. Thank you. All the others seem to have a lot of useless waffling and it gets confusing when you try to parse out the actual information.

    Brother I really appreciate your quick and easy to do video. I got a cast iron pan hand me down and unfortunately I got some rust on it. After watching your vid and some DIY I got it looking and functioning like new ! Some knowledge just isn’t passed down and I appreciate you stepping in.

    Never use a paper towel or cloth on a cast iron skillet. Small fibers break off while drying. Use coffee filters since they are made of tightly woven cellulose fibers that are much stronger.

    Use a plastic scrubber and water to get stuck bits off. Wipe dry immediately after, done. No need to cover with oil or anything, the oil that didn’t get washed off by water is still stuck to the pans surface. Do not use a sponge like he did as the sponge will have some left over soap, if you are using a new sponge, it will get real grimy quickly. Been using my method for years and it works like a charm. Pans are clean, no rust, no need to cover with oil after every use. Simple as that.

    I tried this before when I started using cast iron, trying different things. What it worked for me is after the rinse I dry it with a paper towel (or kitchen towel) and heat it until the water has evaporated. Then I apply the oil and some heat for a bit and as soon some smoke comes out I remove from the heat.

    For a quick maintenance reseason, lightly grease with crisco or grape oil, put it on a high burner until it just starts to smoke, then take it off the burner.

    Thank you. My family has had a large set of cast iron skillets and pans that are nearly 30 years old. But no one actually cleans them the way they are supposed to be cleaned and just ruins the seasoning on the skillet.

    Two different pans. The information you provided is good advice, but the difference between the pans is pretty obvious. Instead of water and salt, I suggest oil and course salt. The oil will preserve the cast iron while the course salt is food safe, and can be easily removed after scrubbing.

    You absolutely can use modern soap on your cast iron. It will not ruin your seasoning.

      ​@@vladislavnoolder soaps back in the time had lye, which is caustic and could strip off the seasoning. Modern soaps like dawn are degreasing, I've heard mixed reviews on using it. I guess it doesnt really matter as long as you oil it before putting it away so it doesnt flash rust. I've done ok with hot water to deglaze stuck on bacon bits and oiled. Heat will kill any germs the next time you use it anyways 😂👍

    I have found that the best vegetable oil or spray is bacon grease to properly season your cast iron pan

    When my cast iron looks like that after cooking it's usually because I screwed up while cooking. If I have temp right and the right amount of oil nothing should stick like that. Usually when it does I got impatient and didn't wait long enough for the pan to heat up.

      True, always use medium/medium low heat and wait 3-5 min for the pan to heat up (you can poke the handle to see how warm it's getting or hover your hand over the pan to see if it feels hot). You could probably use high heat if you're deep frying something like french fries.

    Careful going from hot to cold it can crack. Dont take Hot pan to Cold Water fridge ect, or cold pan to hot burner.

    A patina is a layer of oxidation. In The case of cast iron its rust. The oil is to prevent a patina. Not cause it.

    Paper towel alone will not dry it completely... Heat up on stove untill dry then oil it..

    You forgot to mention that drying isn't enough. You need to put it back on the stove to heat the pan back up after washing and drying with a towel to ensure that all of the water is dried.

      Course sea salt can work, if it doesnt have any dips/pitting you dont have to mess with salt really, most of the time hot water works, it can just help scrub off tough stuck on spots or get into those pits.
