Looks great but how do you stop the meat from burning at the bottom of all that rice ? I know you used ghee but as the rice is on top you’re not tuning the meat so it may stick to the bottom and burn ?
Usually people add Raw peeled Potatoes at the bottom first covering the entire pan and then the Mutton or Chicken masala to avoid burning of masala. I believe Biryani is incomplete without potatoes.
In description it shows 2 tablespoon biryani masala powder. But in video he didnt put biryani masala powder? Pls tell what you mean by biryani masala powder as in video there is no mention

Use thick-bottom handi or place a tawa below this handi to avoid the rice from burning.

The biryani masala is added when layering the yakhni and rice.
Powdered garam masala is not good in hyderabadi biryani
So what you think ?authentic Hyderabadi shall put biryani masala instead of garam masala right ?
