The progress and transformation of your land has been wonderful to watch. It is such an encouragement to those who are just starting out. We are just about to start our 3rd year here in MO Ozarks. This was our first real year with a garden since we moved here. It's slow going as my husband was diagnosed with cancer in the spring, and we have been back and forth to Springfield weekly for treatment. Your video brightened our day and was a reminder that things take time. I pray that in the years to come our garden will look as amazing as yours. Thank you for sharing! ❤

Canning season is here! I’ve expanded my garden this year and planted some new stuff. We need rain. Plants are slow this year. Canning just started this week. Not sure of your canning method, but wanted to mention how steam canners rather than full water bath canners work very well and are less work, too. Through HIM!

Picked Red Beets 4 qts of cooked beets 3 cups of vinegar (cider) 2 cups of water 2 1/2 cups of sugar 2 tsp allspice 3 inch stick of cinnamon 1 tsp salt Wash beets and leave the tops (about a 1inch) and bottoms on and cook like potatoes. Immediately put in cold water. Then peal and chunk. Combine vinegar, water, sugar, spices, and salt. Bring to boil and simmer 5 mins, remove cinnamon stick. Add beets and simmer another 5 mins. Pack into hot jars and cover with hot vinegar solutions leaving ½ headspace. Wipe rims clean and process. Pints process 30 minutes

I don't have a garden, however, with my being a single person and do not go out to eat. I make BIG Batches of meals, and pressure can most of it. I have canned 1/2 pint jars of: beets, yellow potatoes as well as russet potatoes, chicken, cabbage, banana ( they turned pink), 4 Oz. Jars: of strawberry jam, raspberry jam, Pint size jars of: chicken & vegetable soup, turkey & vegetable soup, chicken chili, chicken bone broth, split pea soup, potato soup, diced apples, applesauce, ghee. That is all that I can think of without go to look. This is all what I call my FAST FOOD. I am going to try to get a garden in next spring if I can get everything set up by then, I have to many wild critters around here that I will have to figure out the protection for my garden. Allergic to dog dander so a dog is out of the question. Enjoy watching your videos, stay safe and Yahweh Bless you.

Canned chicken over oatmeal with chicken broth makes a great quick savory breakfast or lunch.
