There’s nothing I won’t find in this your Chanel oooo😳. I just got back from a 3day vacay and all my plantain decided to ripened at once. Since my conscience won’t let me throw them away I decided to look in your channel for something I can make with over ripped plantain. Bang!!!! This recipe appeared!! Flo my sister you are too much 👍
Nice..I tried it though I could not lay my hands on a couple of ingredients. But at least improvised with wheat flour for plantain flour, paprika pepper+olive oil for palmoil! and crayfish cube for actual crayfish. Turned out nice anyway but will definitely retry when my consignment arrive! Thanks for sharing
This a food the ijaws eat but the mix is with corn and ripe plantain which is also fried like Akara with Palm oil. Thought of it and tried it last year came out really nice and friends loved it
Another plantain recipe, yay!! I've never heard of plantain moimoi but always thought of experimenting plantain with blended moimoi. Quick question, is the plantain flour added to thicken and hold the blended plantain batter? Another idea/recipe using plantains, plantain lasagna.....that was yummy. I made that last week and got finished within 5 mins from the oven. Also, plantain stuffed balls, similar to scotch egg. Thanks Flo and God bless!!
Yes the job of the flour is to bind the overripe plantains. If you do not add some sort of flour, it will be a hot mess LOL. Plantain lasagne sounds like something I would love very much! Will try it and see what it tastes like. I also heard about plantain pizza last week! Plantains are soo versatile. Thanks for the tips and God bless you too dear oluwatamiloreify
Hey Flo! Yes and no. To make it have an even and nice color, some people blend the green vegetable. E.g. Spinach or use green tea and use the juice to mix the dry pancake ingredient. You can check out some videos about that on UA-cam here.
Hey thanks for ur wonderful video,i tried it yesterday but dint come out well was very soft, maybe is my fault i dint measure the plaintain flour.is it the nomal plantain flour we buy in europ in a pack?please tell me becos i cant wait to mk it d way u made urs.thanks dear
Llovelaino Asiwe once it has plantain flour written on it, that's the one you want. If you want to get any recipe right, it is important that you use the stated quantities of ingredients when you try it for the first time. :)
Nice one. Plantain pizza sounds yummy!! Please can you make a video sometime? I will really appreciate that:). Talking of new recipes, have you heard of green pancakes? Kids love this due to its color attraction and pancake in general.
The part I use, where the food touches, is actually the front. It's the greener, smoother part of the leaf where all the nutrients are. It is the part of the leaf that faces up when the leaf is still attached to the plant. So I want my food on that side because it is smoother and all the nutrients in the leaf can be transferred to whatever I am cooking.
I tried it.. But I couldn't get cornflour in this lock down. So I decided to experiment with ordinary flour.... It was tasty but I don't know the implications..
+pat akins ideally you should use plantain flour. If you don't have that then try corn flour. If you don't have that either then to be honest, I don't know what else you can use and still get something close to the original taste. Look hard for plantain flour because I believe that if you can buy the overripe plantains where you live, you should be able to buy plantain flour and corn flour there too.
Awww Iyawozzy :) I believe you can still get away with eating what you want in very small quantities. What I do is I prepare these irresistible foods and put them in the freezer. That way, you have it there yet it is not easy to eat it whenever you want cos you have to wait for it to defrost. This helps you spread out eating them *wink!
+Milo Savage really? They are in my village. They dry the plantains and grind with grinding stone in those days. These days they grind with a dry mill.
All Nigerian Recipes I know dear in your village they were not putting food preservatives in those grounded plantian which you will find in the industrial one. Plus the industrial one is 30% plantain and 70% food substitutes. So if you want to cook authentic Africa dish you must avoid industrial foods source.
+Milo Savage O tio, even the most traditional grandmas will shudder at your definition of authentic. I hope I am allowed to cook this meal with my vitro ceramic cooker or should I ditch that for wood fires? :D :D
All Nigerian Recipes well it depends on you .you are deviation from what we are saying authentic and industrial chemical food . Now you know we Africans are highly Europeanized and tend to feel inferior to them and that has destroyed our culture or sense of it. So if you want to use food as a vehicle of culture ( which I said it is up to you ) you must make sure you jealously guard all the cultural perifferals. I can refer you to highly technical and highly scientific people but also cultural theJapanese. Go look at how they cook the following 1) mochi 2) tea service 3)fermentation food 4)how they eat their indomie . Highly technical , highly scientific but you will still see tradition, even in the dressing. Now you are trying I am not saying you are bad, I want you to be top notch original which you are already in the right direction because you used the leave to tie your moimoi not plastics.keep up the good work
+Milo Savage I do NOT have anything to guard. All my videos answer a question or grant a request and this one grants the request "Flo pls can you show how you cook Ukpo Ogede?" If this video does not answer that question for you then it is not for you. Simply click on by and search the rest of UA-cam. If you do not find it on UA-cam, you make your own video since you are so knowledgeable on the subject you go about judging and giving cultural marks to UA-camrs. YOU are the one that is deviating from what this video is about, YOU are the one that has a culture to guard, YOU are the one that wants to go to that stressful length to prove whatever point you want to prove so get on with making your own videos already. And when you do, please invite me. I will come and watch and learn.

Can I use beans flour in place of the plantain flour?
Nice one. Plantain pizza sounds yummy!! Please can you make a video sometime? I will really appreciate that:). Talking of new recipes, have you heard of green pancakes? Kids love this due to its color attraction and pancake in general.
oluwatamiloreify is that the one where veggies are added to the pancake batter before frying?
In addition, my twist to the recipe was adding mixed vegetables and fish in the batter mix before cooking.
Is it Must to use both the flour and the fresh one? Or can one use just the fresh plantain
U must use the plantsin flour to bind it together otherwise it's gonna be messed up. Did mine with overripe plantain only it was horrible, don't try!!
Can I make it with fresh unripe plantain instead of flour
Yum never had this before
My Fav!!!
Yes Lydia Thomas! One only needs to taste this meal once to be hooked. Really delicious! :)))
do I have to use plantain flour? can I use something else
Corn flour
My favourite
Please can you tell me why you always use d back of the leaf? Why not d forth? Thank you 🙏

Ok thanks you very much😍👌

Is the plantain flour compulsory? I don't have it
You are excellent
Is the plaintain flour same as the one use in making amala?
+jupat24 no. Amala flour is yam flour but light brown to dark brown in colour.
Aunt Flo what is the measurement of the plantain flour for this recipe coz I've tried it before and it didn't turn our quite like this.
pls madam I know you are in European were did you get the live because I stay in France
Please whats the purpose of plantain floor in it?
I want to cook but no plantain flour so am going to try with normal flour
Please I'm in Europe France to be precise, how do I get the leaf
It was good but can someone used unripe plantain instead of ripe? 👍👍
+Chi Dinma no, it has to be overripe plantains so that it will be tasty then bind it with unripe plantain flour.
When u go do okpa now flo? :-)
Very correct ma
May i ask why flour is used?
As a binder
can i use fufu flour for this recipe?
Michelle Uwailomwan No.
can I use white nylon to tie it since I can't get the uma where I am.
No, I wouldn't advise using plastic. I would rather use aluminium foil bags or ramekin (if you have them).
❤❤❤❤❤❤❤❤❤❤❤
Hello ma wat abt u don't have the leaves
Wat if corn flour is not available?
+pat akins ideally you should use plantain flour. If you don't have that then try corn flour. How do you make ikwerre moi moi?
Helen I have never heard of that. Sorry.
Must I use flour? Can't it be made with just the plantain?
You must use flour else it will be a mess.
Please is it not much rib plantain or rib one
Another set up for me.... i will lose this weight one day...
Awww Iyawozzy :) I believe you can still get away with eating what you want in very small quantities. What I do is I prepare these irresistible foods and put them in the freezer. Plantain flour is industrial and that was not in our villages so that makes it unauthentic.
