    There’s nothing I won’t find in this your Chanel oooo😳. I just got back from a 3day vacay and all my plantain decided to ripened at once. Since my conscience won’t let me throw them away I decided to look in your channel for something I can make with over ripped plantain. Bang!!!! This recipe appeared!! Flo my sister you are too much 👍

    Nice..I tried it though I could not lay my hands on a couple of ingredients. But at least improvised with wheat flour for plantain flour, paprika pepper+olive oil for palmoil! and crayfish cube for actual crayfish. Turned out nice anyway but will definitely retry when my consignment arrive! Thanks for sharing

    This a food the ijaws eat but the mix is with corn and ripe plantain which is also fried like Akara with Palm oil. Thought of it and tried it last year came out really nice and friends loved it

    Another plantain recipe, yay!! I've never heard of plantain moimoi but always thought of experimenting plantain with blended moimoi. Quick question, is the plantain flour added to thicken and hold the blended plantain batter?
    Another idea/recipe using plantains, plantain lasagna.....that was yummy. I made that last week and got finished within 5 mins from the oven. Also, plantain stuffed balls, similar to scotch egg. Thanks Flo and God bless!!

      Yes the job of the flour is to bind the overripe plantains. If you do not add some sort of flour, it will be a hot mess LOL.
      Plantain lasagne sounds like something I would love very much! Will try it and see what it tastes like. I also heard about plantain pizza last week! Plantains are soo versatile. Thanks for the tips and God bless you too dear oluwatamiloreify

    Hey Flo! Yes and no. To make it have an even and nice color, some people blend the green vegetable. E.g. Spinach or use green tea and use the juice to mix the dry pancake ingredient. You can check out some videos about that on UA-cam here.

      Llovelaino Asiwe once it has plantain flour written on it, that's the one you want. If you want to get any recipe right, it is important that you use the stated quantities of ingredients when you try it for the first time. :)

      U must use the plantsin flour to bind it together otherwise it's gonna be messed up. Did mine with overripe plantain only it was horrible, don't try!!

      The part I use, where the food touches, is actually the front. It's the greener, smoother part of the leaf where all the nutrients are. It is the part of the leaf that faces up when the leaf is still attached to the plant. So I want my food on that side because it is smoother and all the nutrients in the leaf can be transferred to whatever I am cooking.

    I tried it.. But I couldn't get cornflour in this lock down. So I decided to experiment with ordinary flour.... It was tasty but I don't know the implications..

      +jupat24 no. Amala flour is yam flour but light brown to dark brown in colour.

      +Chi Dinma no, it has to be overripe plantains so that it will be tasty then bind it with unripe plantain flour.

      No, I wouldn't advise using plastic. I would rather use aluminium foil bags or ramekin (if you have them).

      +pat akins ideally you should use plantain flour. If you don't have that then try corn flour. If you don't have that either then to be honest, I don't know what else you can use and still get something close to the original taste. Look hard for plantain flour because I believe that if you can buy the overripe plantains where you live, you should be able to buy plantain flour and corn flour there too.

      Awww Iyawozzy :) I believe you can still get away with eating what you want in very small quantities. What I do is I prepare these irresistible foods and put them in the freezer. That way, you have it there yet it is not easy to eat it whenever you want cos you have to wait for it to defrost. This helps you spread out eating them *wink!

    Plantain flour is industrial and that was not in our villages so that makes it unauthentic.

      +Milo Savage really? They are in my village. They dry the plantains and grind with grinding stone in those days. These days they grind with a dry mill.

      All Nigerian Recipes I know dear in your village they were not putting food preservatives in those grounded plantian which you will find in the industrial one. Plus the industrial one is 30% plantain and 70% food substitutes. So if you want to cook authentic Africa dish you must avoid industrial foods source.

      All Nigerian Recipes well it depends on you .you are deviation from what we are saying authentic and industrial chemical food . Now you know we Africans are highly Europeanized and tend to feel inferior to them and that has destroyed our culture or sense of it. So if you want to use food as a vehicle of culture ( which I said it is up to you ) you must make sure you jealously guard all the cultural perifferals. I can refer you to highly technical and highly scientific people but also cultural theJapanese. Go look at how they cook the following 1) mochi 2) tea service 3)fermentation food 4)how they eat their indomie . Highly technical , highly scientific but you will still see tradition, even in the dressing. Now you are trying I am not saying you are bad, I want you to be top notch original which you are already in the right direction because you used the leave to tie your moimoi not plastics.keep up the good work
