  • Oh hi there! You must be wondering what else you can make with all that delicious mince meat you made a couple of weeks ago. Well behold, The Mince Pie Cupcake. A Christmas Crumbs & Doilies classic! And hopefully it will become one of your favourites!
    For the pastry stars
    110g plain flour
    50g cold butter
    Pinch of salt
    1 tbs cold water
    Demerara sugar and an egg
    For the cupcakes
    125g self raising flour
    125g caster sugar
    2 tsp mixed spice
    1/4 tsp ground ginger
    1/4 tsp bicarbonate of soda
    65g caster sugar
    60 light soft brown sugar
    75g mince meat
    3 tbsp brandy-soaked currants
    100g browned butter, left to cool completely
    40g soft butter
    2 lg eggs
    1.5 tbsp milk
    For the buttercream
    150g soft butter
    340g icing sugar, sifted
    Zest of an orange
    2 tbsp brandy
    2 tbsp orange juice

    I've been hunting for a decent MPC recipe for ages & when I watched this last night I just had to give it a go. I don't keep booze in so went & got some brandy today & Oh my lord, I'm so glad I did! Without doubt THE BEST recipe I've found so far & I'm not even joking when I say I ate 5 of them still warm from the oven! Also, that buttercream is to die for! Thank you soooo much! :-D

    Hi Jemma!
    I love the way you iced your cupcakes just with a spatula and I can see you have a lot of practice! I love the thing that you don't always have to use a piping bag to ice your cupcake, and with spatula it's not just beautiful as if you were to pipe them, but it's also quicker!
    Also, nice touch with the cookies...beside sprinkling demerara on top, you could sprinkle some cinnamon too!

    Hi I'm just wondering is it just 65 and 60 of light brown and Castor sugar you need? Written recpie gas 125g of Castor sugar also, can't see in video when this is added?? Making these now they sound yum!

      kim de la fuente add the remaining 2 tbls of orange juice or use essence.That's it!

    As someone who has never celebrated Christmas, I genuinely want to know if its normal for alcohol to be incorporated in food? Is it okay by the parents if a child eats it? Thx in advance! xx

    is there a difference when you use unsalted butter and salted butter in the buttercream icing???

      Rhobelle Macachor you never know how much salt is in salted butter. So for baking if the recipe asked for salt and unsalted butter it's controlled. If u use salted butter AND salt your bake may come out saltier than you wanted. Some people if they use salted butter just omit or half the amount of salt required for a recipe. But in some cases where there is no salt in the recipe it's possible it would alter the flavor. I think it does something to the consistency of the bake but sorry I don't remember specifically what it does. Hope this helps!

      I normally just use salted butter for buttercream. Remember, BUTTERcream.

    Hello jemma I would like to ask you a recommendation to make mini cupcakes in my baby shower, I will have a boy in February and I would like to make a table of sweets with cupcakes and mini cupcakes related to the birth of my baby. I myself will prepare everything, so I would like it to be very rich but sensible to perform and decorate and still festive .... you could recommend me some simple recipe and decoration for both cupcakes ... I would like them to be different, so that If you see the table varied, so that the minicupcakes differ from the normal size cupcakes. And if it were possible that I could leave them ready the day before to not be running that same day since I am pregnant and I will do everything alone.
