Qissa Kulfi Ka : Kulfiwale of Shahjahanabad

- Kulfi is a frozen milk dessert which traces its origins to the 17th century Shahjahanabad. Mirza Hadi Ruswa mentions in his epic "UmraoJaan Ada" (1922, pg. 19) about "do qufliyaa'n nosh ki gayi'n". Qufli, (probably hinting at the qufl or lock like make of the kulfi mould) changed to Qulfi/kulfi later on.
We spoke with the kulfi-mould and frame karigars at the kulfi frame making karkhanas at Laal Kuan (Shahjahanabad). It is interesting to note the differences between the types of kulfi moulds and the varieties of kulfis available in the bazars of Old Delhi.
