Fruit mixing for Plum Cake
Ingredients
1. Dates (seedless) - 200gm
2. Grapes -raisins - 200gm
3. Kismis - 100gm
4. Tutti frutti (green & red) - 200gm
5. Dried Orange rounds - 100gm
6. Sugar coated dried ginger slices + Ginger Murabba- 200gm
7. Dried cherries - 100gm
8. Cherries - 100gm
9. Champagne /Wine/Sherry /Rum/ Brandy - 1 ½ to 2 cup
Preparation
1. Chop all the dried fruits to small cubes.
2. Transfer them together into clean dry bottle.
3. Add the Champagne /Wine/Sherry /Rum/ Brandy to it up to about half level of the fruits. Stir well, keep closed.
4. Every other day toss it well & set aside.
5. You can use after 30days even up to 1 to 2 years.

we macerated fruits as well in RUM , but it never made it to the cake . :) it ended up as a midnight snack :) We used it to make quick sandwiches with cream cheese
May be you can teach us how to make alcohol ? , the mild kind useful for cooking - because, as you very well know it is good for the gut. for eg : a little sugar added to coconut water after it has rested for 10 hours is great for fermenting appam ( so much better than synthetic leaveners ) *Thank you for the fabulous session*
