    Thank you thank you for plant based meal prep! After developing gallbladder issues in pregnancy, I had to change my diet completely to be low fat vegan (with some lean protein and some low fat dairy). I've been eating a lot of fruits & veggies and I've needed inspiration. I eat a lot of potatoes 🥔 too! 👍🏼 More plant 🌱 based videos please ❤️ Congrats on your little one 👶🏼

    Your vegetable medley is something I make at the beginning of the week and instead of cooking them I add a little Italian dressing. I can dip out of it all week for different recipes or my husband can top his salad with them before going to work.

    Steph- Try rinsing your onion after cutting it into quarters/ pre-dicing, it's the only thing that has helped me so far! Also, I've heard, but haven't yet had the chance to try (as my onions have been kind to me), that breathing the onion fumes through your nose might be what's causing the stinging/tearing reaction. I have yet to mouth breathe while cutting onions, but have fun trying that! haha

    Use tomato paste in a tube. More expensive but lasts longer. Best thing ever. We had them in Europe for forever, finally USA caught up and I could not be happier!

    I found that if you use a food processor it cuts down on chopping. That is especially true for onions, I use that if the recipe calls for diced.

    I make something similar for my family with sweet potatoes roasted then scooped out and mashed, then add in my diced veg then roasted in the oven

    You said in another video that you (Steph) did sweets videos for a little bit and accidentally made an impact that went against your mission. I think it would be cool to see a Steph and Adam suggested major American holiday (Thanksgiving, Christmas/Hanukkah) plant based dessert! Food is so important for bringing people together (ex. guac at a football party) and sharing a meal with friends and family is powerful- especially traditional meals for holidays. Have any suggestions? :) love your videos!

    Great recipe! Stephanie if it makes you feel any better, I buy my onions pre diced to avoid the tears. Hey is Pepper vs. Capsicum this year's version of Fries vs. Chips!? 😂🤣

    This looks delicious but I'm a little nervous about the cashew sour cream! We've tried cashew cheese before and it was NOT good. Have you guys thought about doing an episode about dairy free sauces (using other types of nuts)?

      I'm super picky about alternatives, and can taste the difference readily in most vegan substitutions. I've had a cashew cream (not this recipe yet) that tasted EXACTLY like the dairy version! It was so weird! So I would definitely give it a try, because it is possible! Blew my mind, that's for sure.

      Both have their plus sides! I say go with what your body is craving. Once you eat clean it Knows what it needs.

    **Can Opener Tip: instead of the can opener blade on top, set it up on the side so that the can opener is sitting on top of the can. Cuts the whole top off instead of just the lid. Takes all the trouble away of trying to get the lid out.

    So I have a question. I’ve made the vegan cheese recipe (pots & carrots not the cashew) and although it was good, the consistency was not what I kept hearing it would be. You know the oooey gooey cheesey sauce perfect for nachos? It still had a gritty sort of texture. Am I doing something wrong or is it right and I just need to learn to adapt? It does have a good flavor tho! Can you make a recipe (like nachos) using a vegan cheese recipe??

      Blend for longer. When you break down the potato more it will become more gluey for lack of a better word. Blender works best for me, but make sure you either have a high speed blender, or enough liquid so your motor doesn't get too strained. The only other thing I can think of is that maybe you didn't cook the potatoes long enough, or left the skin on. Hope something helps!

    My zoodles kept ending up watery so I just gave up on that recipe and now I have a bunch of leftover zucchini and have no idea what to do with it.

      Bummer, try cooking them fast on a high heat. If you do low and slow they will definitely get watery.

    You can freeze the onion, so you don’t have to cut it each time and hurt your eyes.

    When you do you hospital tour make sure you ask about vegan diet availability the answer may surprise you. Not all hospitals provide this option.

    To help with chopping, get one of those containers, with a metal grid in the lid, and a lever that pushes veggies though the grid. You can do most veggies in seconds. Guy interupting, is annoying. :(

    Clean your glasses after cutting onions. They hold the fumes against your eyes forever (at least to me). Adam leave her alone. I promise baby brain is a symptom of pregnancy and so is becoming frustrated because you can't think of the word you know you knew or perform the task that was easy. Steph write down your passwords and pin numbers then hide them for when baby brain hits.
